Quick Chicken Marsala with Asparagus and Mozzarella

Preheat oven to 350 degrees
- 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1 3/4 lbs. chicken cutlets (about 8)
- 1/4 c. butter, divided
- 1/2 c. marsala cooking wine
- 1/2 c. chicken broth
- 16 asparagus spears, trimmed and blanched
- 1 c. shredded mozzarella cheese
Pink Fluff Salad

Dissolve jello in 1/1/2 c
- 1 package strawberry jello
- 1 (8oz.) package cream cheese
- 1 #2 can crushed pineapple
- 1/3 c. diced maraschino cherries
- 1/2 c. broken pecan pieces
- 2 c. Dream Whip (whipped)
Garlic Greens

Cook onion, garlic cloves, and paprika in a large pot with olive oil, about 2 minutes
- 1 sliced onion
- 8 whole garlic cloves
- 1/2 tsp. smoked paprika
- 3 TBSP. olive oil
- 1 bunch mustard greens
- 1 bunch kale
- 2 c. water
- pinch of sugar
- pinch of salt
- hot sauce
New Potato Pouches

- 3 lbs. small to medium-size new potatoes
- 2 . TBSP. butter
- 2 cloves garlic, finely chopped
- 2 TBSP. finely chopped parsley
- 1 tsp. chopped fresh thyme
- 1/2 tsp. chopped fresh rosemary
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Cornbread

Preheat oven to 425 degrees
- 1 c. yellow cornmeal
- 1 c. all-purpose flour
- 1 TBSP. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/4 c. milk
- 1/4 c. (1/2 stick) butter, melted
Texas Taco Platter

in a large skillet or Dutch oven, brown beef and onion; drain
- TOPPINGS:
- 2 lbs. ground beef
- 1 large onion, chopped
- 1 can (14 1/2 oz.) tomatoes with liquid, cut up
- 1 can (12 oz.) tomato paste
- 1 can (15 oz.) tomato puree
- 2 TBSP. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. garlic powder
- 2 tsp. salt
- 1 can (28 oz.) ranch-style beans, undrained
- 1 pkg.( 10 1/2 oz.) corn chips
- 2 c. cooked rice
- 2 c. (8 oz.) shredded cheddar cheese
- 1 med. onion, chopped
- 1 head iceberg lettuce, shredded
- 3 medium tomatoes, chopped
- 1 can (2 1/4 oz.) sliced ripe olives, drained
- 1 c. picante sauce, optional
Beer-Battered Broccoli

- 1 c. beer
- 1 c. flour
- 1/4 c. chopped parsley
- Pinch of salt
- 4 c. broccoli florets

Tee's Corn Pudding

Combine first 4 ingredients
- 1/4 c. sugar
- 3 TBSP. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. salt
- 6 large eggs
- 2 c. whipping cream
- 1/2 c. butter or margarine, melted
- 6 c. fresh corn kernels or 6 c. frozen whole kernel corn or canned shoepeg corn
Strawberry Onion Salad

In a large bowl, toss the romaine, strawberries and onion
- 1 bunch romaine, torn
- 1 pint fresh strawberries, sliced
- 1 small red onion, thinly sliced
- 1 c. mayo or salad dressing
- 1/3 c. sugar
- 1/4 c. milk
- 2 TBSP. cider vinegar
- 1 TBSP. poppy seeds
