C shredded cheddar (6 oz)
C sour cream
green onions, finely chopped
slices bacon, cooked & crumbled
Preheat oven to 375. Spray 2 qt shallow baking dish w/ non stick spray, set aside. Cover potatoes w/ water in 4 qt pot, bring to boil over high heat. Reduce heat to low and cook 10 mins or till tender. Drain & mash. Stir in 1 C cheese, mayo, sour cream, green onion & 4 stips bacon. Turn into prepared baking dish & bake 30 mins or till bubbly. Top w/ remianing 1/2 C cheese and bacon. Bake an additional 5 min or till cheese is melted. Garnish w/ additonal green onions.
