Toasted Coconut Marshmallows

Adapted from Barefoot Contessa
- 7 oz sweetened flaked coconut
- 3 envelopes unflavored gelatin
- 1.5 cups sugar
- 3/4 cup light corn syrup
- 2 tbsp honey
- 1/4 tsp salt
- 1 tbsp vanilla extract
Maryland-style Crab Cakes (Oceanaire Seafood Room)

Oceanaire Seafood Room was happy to share its recipe for these tender, soft crab cakes
- 2 eggs
- 1 cup mayonnaise
- 3/4 teaspoon Dijon mustard
- 1 1/4 teaspoons Old Bay Seasoning, divided
- 3/4 teaspoon fresh chopped tarragon
- 1/4 cup finely chopped onion
- 1 tablespoon finely chopped celery
- 1/4 pound (scant 2 cups) crustless cubed white bread (about 1/4 loaf), cut into small cubes
- 1 pound jumbo lump crab meat, drained of any liquid
- 2 tablespoons butter, at room temperature
- Serve with mustard mayonnaise (mayonnaise seasoned with a small amount of dry mustard, Dijon mustard, Worcestershire sauce and salt and thinned with a little cream)
Artichoke and Roasted Garlic Dip With Baked Flatbread Sticks

Preheat oven to 350°F. Brush the strips of flatbread with the oil and sprinkle with the smoked paprika
- flatbread sticks:
- 3 sheets whole wheat flatbread, cut into 1”x4” sticks
- 3 tablespoons extra virgin olive oil
- 1 tablespoon smoked paprika
- artichoke dip:
- 1 head garlic, top sliced off
- 1 tablespoon extra virgin olive oil
- 14 oz can artichoke hearts, drained and chopped
- 2 green onions, thinly sliced
- 8 ounces mascarpone, softened
- 1/3 c light mayonnaise
- 1/2 cup part-skim mozzarella, shredded
- 1/4 cup parmesan, grated
- 2 tablespoons hot sauce
- 2 teaspoon dry mustard
- salt and pepper to taste
- topping:
- 1/3 cup panko breadcrumbs
- 1 tablespoon parmesan, grated
- 1 1/2 tablespoons butter, melted
Sweet Cherry, Lemon and Ricotta Crostinis

Place the ricotta, zest of one lemon, honey in a bowl and season with salt and pepper
- 3/4 cup part-skim ricotta
- 2 lemons, zested and divided
- 1 tablespoon honey
- 2 cups sweet cherries, pitted and quartered
- 1 sourdough baguette, sliced into 18 pieces and toasted
- salt and pepper to taste
Carrot Goat Cheese Mash Shepherd's Pie

Slightly adapted from Alton Brown's Shepherd's Pie recipe
- Carrot and Goat Cheese Mash Topping:
- 1 pound russet potatoes
- 3 medium carrots
- 3 tablespoons unsalted butter
- 2 teaspoons whole milk
- 3 ounces goat cheese
- Salt
- Freshly ground pepper
- Meat filling:
- Olive oil
- 6 brussels sprouts, quartered
- 1/2 yellow onion, diced
- 4 small carrots (about 1.5 pounds)
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/4 pound ground pork
- 1/2 pound ground sirloin
- 1 tablespoon all-purpose flour
- 2 teaspoons tomato paste
- 1 cup beef broth
- 1 teaspoon worcestershire
- 2 teaspoons fresh rosemary sprigs

- 2 cups rolled oats
- 1/2 cup light brown sugar
- 1/3 cup flaxseed meal
- 2 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup coconut milk
- 1 cup low-fat milk
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 1/2 tablespoons melted coconut oil (can substitute melted butter)
- 2 fuyu (jiro) persimmons, peeled and chopped
- 2/3 cup fresh (or frozen) cranberries, blanched
- 1 banana, chopped
- 2 tablespoon butter, softened

Brown Butter Cookies

Adapted from Bittersweet Treats (Pasadena, CA) by the Los Angeles Times
- 10 tablespoons (1 1/4 sticks) butter
- 1 3/4 cups dark brown sugar
- 1/2 teaspoon kosher salt
- 1 egg plus 1 egg yolk
- 1 tablespoon vanilla bean paste
- 2 cups plus 2 tablespoons (9 ounces) flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
Pasta with Mushrooms

Cook pasta in salted water, 1 minute less than the time recommended for al dente
- 1/3 cup extra virgin olive oil
- 3 cloves garlic, minced or finely cut
- 2 10 oz packages of mushrooms, (baby bella, cremini or shitake), sliced
- 2 tablespoons butter
- 1/2 cup finely chopped parsley
- 1/4 cup cognac or white wine
- 2 small chicken bouillon cubes, the size of mine are 4 grams each
- Fresh ground pepper to taste
- 1 lb pasta: any long pasta will do. I used spaghetti rigati. I added 1 tbsp of salt to the water. Linguini or pappardelle work equally well.
- Grated cheese to top, I used Pecorino Romano cheese, Parmigiano is also very good here
Beer bread

First, pre-heat the oven to 375 and make the bread by combining all the ingredients
- 3 cups flour
- 1 tbsp sugar
- 1 tsp salt
- 1 tbsp baking powder
- 1.5 cups beer
- Optional glaze: 1 egg, 2 tsp water, beaten

- Pretzel Milk:
- 3 cups small pretzels
- 1 1/2 cup whole milk
- Wet Ingredients:
- 1 large egg
- 2 tablespoon unsalted butter, melted and cooled to room temperature
- 1 teaspoon vanilla extract
- Dry Ingredients:
- 1 cup all-purpose flour
- 3 tablespoons white granulated sugar
- 1 tablespoon baking powder
- 3/4 teaspoon fine-grain sea salt
- 1 cup reserved pretzel milk
- Add-Ins:
- 1 handful of small pretzels, broken into smaller pieces
- Whipped Sweet Yogurt:
- 3 tablespoons Greek yogurt
- 1 tablespoon whole milk
- 2 tablespoons confectioner’s sugar
