Banana Sheet Cake

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup sugar
- 2 bananas, mashed
- 1/2 cup vegetable oil
- 2 large eggs
- 1 (8-ounce) can crushed pineapple, drained
- Frosting
- 4 oz. cream cheese, softened
- 1 teaspoon vanilla extract
- 1/4 cup butter, softened
- 2 1/4 cups sifted powdered sugar

- 1 large baking potato (russet) cut into cubes

- 1 tsp. dried oregano
- Shredded cheddar cheese (optional)

Pumpkin Pie Green Smoothie

Combine liquids and light stuff on the bottom, weighted down by the banana and ice
- 1 C milk
- 1 ripe (frozen, if possible) banana
- 1/8 C oats
- 1/3 C pumpkin puree (not pumpkin pie mix!)
- 2 handfuls baby spinach
- 1/2 t cinnamon
- sprinkle of nutmeg or cloves
- couple of ice cubes
Cheesecake Stuffed Strawberries

Remove the stems from the strawberries, and using a melon baller, scoop out a hole from the top of each strawberry

Warm Blue Crab Au Grautin

Preheat oven to 275. Squeeze excess moisture from spinach
- 1 package (10 oz.) frozen chopped spinach, cooked
- 2 T unsalted butter
- 1 T garlic, minced
- 1/4 cup onion, minced
- 1/2 cup white wine
- 2 T flour
- 1/2 cup heavy cream
- 1 t lemon zest
- Pinch cayenne pepper
- 1 t black pepper
- 1 1/2 t kosher salt
- 2 T basil, chopped
- 2 t thyme, chopped
- 2 cups artichoke hearts, coarsely chopped
- 1/4 cup Gruyere cheese, grated
- 1/4 cup Romano cheese, grated, plus more for topping
- 1/2 cup (4 oz.) cream cheese
- 1/2 pound cleaned crabmeat (jumbo lump recommended)

- Red Velvet Ice Cream:
- 5 egg yolks
- 1 cup heavy cream
- 1 cup low fat milk
- 2 cups buttermilk
- 1 1/4 cup sugar
- 2 tbsp cocoa powder
- pinch of salt
- 1 tsp vanilla extract
- Red food coloring
- Coconut Cream Cheese Swirl:
- 6 oz cream cheese
- 2 tbsp heavy cream
- 2 tbsp butter (room temperature)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/2 cup sweetened shredded coconut (optional)

- 4 garlic cloves
- 1 tsp dried Herbs de Provence (recipe below if you don't have it)
- 1 tsp red wine vinegar
- 1 tsp olive oil
- 2 tbsp Dijon mustard
- olive oil spray (I used my misto)
- 4 (6 oz) wild salmon fillets, 1" thick (if frozen, thaw first)
- salt and fresh ground pepper to taste
- 4 lemon wedges for serving

- 3/4 cup brown sugar
- 3 medium ripe bananas, sliced
- 1/2 cup fat-free buttermilk
- 2 tablespoons canola oil
- 2 large eggs
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 tablespoon coarse sugar (like Sugar In The Raw)
Chocolate Oatmeal Peanut Butter Sandwich Cookies

1. Preheat your oven to 350 degrees F
- Cookies:
- 1 1/2 cups all-purpose flour
- 1/4 cup Dutch processed cocoa powder
- 1 cup (8 ounces) unsalted butter, room temperature
- 1 3/4 cups light or dark brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking soda
- 1 1/4 teaspoon fine-grain sea salt
- 2 3/4 cups old fashioned rolled oats
- Peanut Butter Frosting:
- 2 tablespoons unsalted butter, room temperature
- 3/4 cup powdered sugar, sifted
- 1/2 cup creamy natural peanut butter (*See note below)
- 3 tablespoons whole milk
- 1/2 teaspoon sea salt (or to taste)
- Note: I used creamy natural peanut butter with no sugar added; if your peanut butter has sugar, I’d recommend scaling back on the powdered sugar and doing it to taste.
Velveeta Chili Dip
