Sweet Cherry, Lemon and Ricotta Crostinis

  • 3/4 cup part-skim ricotta
  • 2 lemons, zested and divided
  • 1 tablespoon honey
  • 2 cups sweet cherries, pitted and quartered
  • 1 sourdough baguette, sliced into 18 pieces and toasted
  • salt and pepper to taste

Step 1

Place the ricotta, zest of one lemon, honey in a bowl and season with salt and pepper.

Stir the mixture until well combined.

Spread a small amount of the mixture onto each crostini and top with a small amount of cherries.

Finish each with the remaining lemon zest and serve.
