Quick Spinach Manicotti

Preheat oven to 375°F. In a large pot of boiling salted water, cook pasta shells according to package instructions
- 8 manicotti shells
- 1 (15-oz.) container light ricotta cheese
- 1 cup grated Parmesan cheese
- 1 (8-oz.) pkg. frozen chopped spinach, thawed and drained of excess moisture
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. dried basil
- 2 cups marinara sauce
- 1/4 cup Parmesan cheese
Horseradish (Vitamix)

Select Variable speed #5. Drop pieces of horseradish through lid plug opening until all pieces are grated
- 1 cup horseradish root, peeled and cut in pieces
- 1/2 cup vinegar
- 1 T sugar
- 1/4 t salt
- 1/2 cup sour cream (if making cream style)
- 1 cup ketchup or chili sauce (if making cocktail sauce)
Coffee Cheesecake Ice Cream Pie

With an electric mixer, beat the cream cheese until smooth
- 1 pre-packaged graham cracker crust
- 2 (8-ounce) packages cream cheese, softened
- 2/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup milk (I used 2%)
- 1 pint coffee-flavored ice cream (I used Starbucks), softened
- 1/2 cup chocolate chips, melted (optional)
Pomodoro Sauce by Joe Bastianich

Heat oil in a saucepan over medium
- 1/4 cup olive oil
- 3 garlic cloves, crushed
- 3 16-ounce cans of peeled, whole Italian plum tomatoes, such as San Marzano
- 1 teaspoon Sicilian oregano (optional)
- 1 teaspoon salt (or to taste)
- 1 teaspoon freshly ground black pepper
Hot Pumpkin Spice Latte with Protein

Blend at high speed and serve hot
- 1 C. HOT almond milk (or nonfat milk)
- 1/2 C HOT coffee (or 1/2 tsp of instant mixed with 1/2 C HOT water)
- 1 T. fresh or canned 100% Pumpkin Puree
- 1/2 tsp. pumpkin pie spice ( a mixture of ground cinnamon, ginger, allspice, and nutmeg) or cinnamon
- 1 Scoop VANILLA Whey Protein
- 1 packet of Stevia (or stevia to taste)

1. Place potatoes in large saucepan and cover with 1 inch water
- 2 pounds potatoes, scrubbed (I used Yukon Golds)
- 8 tablespoons unsalted butter (1 stick, 4 ounces), melted
- 1 cup half-and-half , warmed
- 1 1/2 teaspoons table salt
- Ground black pepper
- Chives for garnish (optional)
Quinoa Flour-Whole Wheat Pancakes with Greek Yogurt

In a large bowl, combine the flours, baking soda, sugar, cinnamon and nutmeg
- 1/2 cup whole wheat flour
- 3/4 cup quinoa flour
- 1 teaspoon baking soda
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 1/4 cups milk
- 1/2 cup 2% plain Greek yogurt (I used Chobani)
- 1 teaspoon vanilla extract
- 1 large egg lightly beaten
- Butter for the skillet
- Additional Greek yogurt and maple syrup, if desired

Boil a pot of salted water
- 1 tablespoon canola oil, divided
- 1/2 pound fresh sausage (pork or lamb), sliced into coins
- 2 garlic cloves, crushed
- 1/2 pound broccoli rabe, cut in one inch pieces (discard tough ends)
- 1 tablespoon butter (or omit and use warmed pomodoro sauce)
- 1/2 teaspoon red chili pepper flakes Salt and pepper to taste
- 1 pound dried or fresh orecchiette
- 1 tablespoon olive oil (to drizzle)
