Spicy Black Bean Cakes with Avocado Butter

Recipe from the book "PANCAKES: 72 Sweet and Savory Recipes for the Perfect Stack
- 1 tablespoon olive oil
- 1/4 cup red bell pepper, seeded and diced
- 1/2 cup yellow corn kernels (canned, frozen, or fresh)
- 1 jalapeño pepper, seeded and minced
- 2 teaspoons ground cumin
- 1 garlic clove, minced
- One 15-ounce can black beans, rinsed and drained well
- 1/2 cup cornmeal
- 1 large egg, lightly beaten
- 2 tablespoons fresh cilantro, minced
- 2 teaspoons hot sauce
- 3/4 teaspoon salt
- Vegetable oil, for the skillet
- Avocado Butter
- 4 ripe Haas avocadoes
- 1/2 cup sour cream
- 1/4 cup freshly squeezed lime juice
- 1/2 teaspoon finely grated lime zest
- 1/4 teaspoon ground cumin
- Salt and freshly ground black pepper
Peanut Butter Green Monster Smoothie

Layer the ingredients in the blender as usual (water, PB, ice, and powders first, then spinach, then banana on top)...
- 1/2 C skim milk
- 1/2 C water + ice cubes (5 or 6)
- 1 T ground flaxseed
- 1 T peanut butter
- 1-2 T Carnation Instant Breakfast powder, chocolate flavor (or cocoa powder, or chocolate protein powder, or nothing! Experiment!)
- 2 handfuls fresh spinach
- 1 ripe banana, sliced
Rigatoni with Pumpkin Cream Sauce

Cook pasta according to package instructions
- 8 oz. rigatoni pasta
- 1 Tbsp. butter
- 3/4 cup milk (I used 1% milk)
- 3/4 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. rubbed sage
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup part-skim ricotta cheese
- 1/4 cup tomato soup
- 14.5 oz. can diced southwestern-style tomatoes, rinsed and drained
- Grated Parmesan cheese (optional)
Spicy Cucumber Margarita

1. To the jar of a food processor, add the chopped cucumber and pulse until the mixture turns smooth
- Glass Rim:
- 3 cucumbers, peeled and roughly chopped
- 1/2 cup white granulated sugar
- 1/2 cup water
- 1 cup tequila
- 2 tablespoons triple sec
- 1/4 cup fresh lime juice (3-4 limes)
- 1 jalapeño, sliced
- 2 tablespoons Maldon sea salt
- 2 teaspoons white granulated sugar
- 1 teaspoon fresh lime zest

- 1/2 cup 2% Chobani Greek yogurt

- 1/2 white granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3/4 cups whole milk
- Banana Topping:
- 4 tablespoons unsalted butter
- 1/2 cup light brown sugar
- 1/4 teaspoon fine-grain sea salt
- 3 tablespoons bourbon

- 2 to 3 lbs. chuck roast
- 3 10-1/2 oz. cans chicken broth (or similar box broth equivalent)
- 2 7 oz. cans chopped green chiles
- 1 20 oz. can Ro-Tel brand diced tomatoes original style
- 1 15 oz. can refried beans
