Instructions Heat an oval dutch oven over medium high heat

  • For the meat:
  • 1 3-4 lbs piece of braising beef, preferably bone-in (chuck)
  • 2 T vegetable oil
  • coarse salt and pepper to coat the beef, at least a tablespoon of salt
  • decent pinch of salt for onions
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 T white wine
  • 2 cups beef stock
  • For the final dish:
  • 3-4 cups beef stock
  • salt if stock is homemade
  • 1 lbs homemade, handcut noodles
  • 1-2 T flour if needed (see directions)
  • salt and pepper to taste for final dish
