Chicken Mole

1. Adjust oven rack to middle position and heat oven to 350 degrees
- 2 ancho chiles, brushed clean (or 2 Tb. ancho chili powder)
- 1/2 chipotle chile, brushed clean (or 1/2 tsp. minced chipotles in adobo sauce)
- 3 Tb. vegetable oil
- 1 medium onion, minced
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1 oz. bittersweet or semisweet chocolate, chopped coarse

- 2 cloves garlic, minced
- 1/4 c. all-purpose flour
- 1 tsp. dry mustard
- 1/4 tsp. nutmeg
- 3 c. milk
- 8-oz. pkg. shredded Cheddar cheese
- 1 c. shredded Monterey Jack cheese
- 1/4 c. grated Parmesan cheese
- 2 Tb. fresh herbs, finely chopped such as parsley, dill, oregano and basil
