Prime Rib Roast

Set out the roast at room temperature for 2 hours
- From Pam Anderson's The Perfect Recipe.
- 3 Tb. olive oil
- 1 (7 lb.) 3-rib rib roast, first cut, trimmed and tied
- 1 Tb. kosher salt
- freshly ground pepper , to taste
Apple Cupcakes with Cream Cheese and Coconut Frosting

Preheat the oven to 375�F
- Cream Cheese and Coconut Frosting:
- 6 tablespoons softened unsalted butter
- 1 c. brown sugar
- 2 large eggs
- 1 1/2 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 c. applesauce
- 6 ounces softened cream cheese
- 1 1/2 to 2 c. confectioners' sugar
- 1 1/2 tsp. vanilla extract
- 1 tsp. grated lemon rind
- 1 1/4 c. flaked coconut
Chicken Madras Curry with Chapati

Directions: In a small saucepan over medium-high heat, warm the 1/4 cup ghee
- If desired, garnish the curry with fried shallots and cashews, which add a crunchy texture to this dish.
- 1/4 cup ghee or canola oil, (optional)
- 2 shallots, thinly sliced, (optional)
- 1/3 cup raw cashews, halved (optional)
- 1 Tbs. ghee or canola oil
- 1 1/2 lb. boneless, skinless chicken breasts , or thighs, cut into 1-inch cubes
- 1 jar Maya Kaimal Madras curry sauce
- Steamed rice for serving
- Fresh cilantro sprigs for garnish
- Chapati for serving
Deep-Dish Pecan Pie

Beat in 1 cup butter and cream cheese at medium speed of an electric mixer until creamy
- This is the grande dame of pecan pies. It slices best when chilled and served the next day, so it's perfect to make ahead.
- 1 c. butter , softened
- 2 (3 oz.) pkg. cream cheese, softened
- 2 c. flour
- 1/4 c. sugar
- 1 (16 oz.) bottle light corn syrup
- 1 1/2 c. packed light brown sugar
- 1/3 c. butter , melted
- 4 eggs, lightly beaten
- 4 egg yolks, light beaten
- 1 Tb. vanilla extract
- 1/2 tsp. salt
- 3 1/2 c. pecan pieces or halves
Nutty Olive Spread

In a medium bowl, beat cream cheese until fluffy
- 2 (3 oz.) pkg. cream cheese, softened
- 1/2 c. mayonnaise
- 1 (53/4 oz.) jar stuffed green olives, drained and finely chopped
- 1/2 c. finely chopped pecans, toasted
- 1/8 tsp. ground black pepper
- crackers to serve

- Horseradish Cream:
- 1 (6 1/2-7 lb.) prime rib roast
- 1 Tb. olive oil
- 2 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1 c. heavy whipping cream
- 3/4 c. sour cream
- 2 Tb. prepared horseradish
- 1 Tb. chopped fresh chives
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
- Garnish: additional chopped fresh chives
