Old-Fashioned Cocoa
By Tamipri
In a small saucepan, combine cocoa and sugar; whisk in half and half until mixture is smooth
- 1/2 c. unsweetened Dutch-process baking cocoa
- 1/4 c. powdered sugar
- 1/2 c. half and half
- 4 c. milk
- 1 tsp. vanilla extract
- Garnish: whipped cream and grated chocolate
- Opt. cinnamon and nutmeg or peppermint extract
Savory Roast Turkey Breast

Place turkey breast in an ungreased shallow roasting pan
- 5 1/2 to 6 lb. bone-in turkey breast
- 1/2 c. butter, sliced
- 1/4 c. lemon juice
- 2 Tb. soy sauce
- 1 Tb. dried sage
- 1 tsp. dried thyme
- 1 tsp. dried marjoram
- 1/4 tsp. pepper
- 2 Tb. green onions, finely chopped
Prosciutto-Wrapped Asparagus

Mix goat cheese, garlic and pepper in a small bowl to blend
- This can be served warm or at room temperature.
- 2 1/2 oz. soft fresh goat cheese, (such as Montrachet)
- 1 garlic clove, minced
- 1/4 tsp. ground black pepper
- 32 asparagus spears, trimmed
- 16 paper-thin prosciutto slices
Grilled Pineapple

Brushed with a Carribean-style marinade and placed over hot coals, pineapple develops a smoky sweetness
- FOR THE MARINADE
- 2 Tb. dark honey
- 1 Tb. olive oil
- 1 Tb. fresh lime juice
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1 firm yet ripe banana
- 8 wooden skewers, soaked in water for 30 minutes, or metal skewers
- 1 Tb. dark rum (opt.)
- 1 Tb. grated lime zest
Chicken Salad Croissants

Combine the first 10 ingredients in a large bowl; mix well
- 2 c. cooked chicken, cubed
- 2/3 c. mayonnaise
- 1/3 c. celery, diced
- 1/4 c. raisins
- 1/4 c. sweetened, dried cranberries
- 1/4 c. slivered almonds
- 1 Tb. fresh parsley, minced
- 1 Tb. lemon juice
- 1 tsp. mustard
- 1/8 tsp. pepper
- 6 lettuce leaves
- 6 croissants, split in half horizontally
Chicken, Lemon and Olive Stew

Season the chicken all over with 2 tsp
- Saffron Couscous:
- This stew is perfect for casual entertaining because it tastes better a day or two after it's made.
- 6 lb. boneless, skinless chicken thighs, trimmed of excess fat
- kosher salt and freshly ground pepper
- 1/4 c. extra-virgin olive oil
- 3 large yellow onions, thinly sliced
- 8 cloves garlic, crushed and peeled
- 1 Tb. ground tumeric
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 3 small dried red chiles, preferably chile de Arbol, stemmed and crumbled
- 2 (3") cinnamon sticks
- 2 fresh bay leaves, or 1 dried
- 1 qt. chicken broth
- finely grated zest and juice of 4 lemons
- 2 c. canned chickpeas, rinsed and drained
- 2 c. small pitted green olives, such as picholine or manzanilla
- 3 c. couscous, (1 1/2 lb.)
- 3 c. chicken broth
- 4 Tb. unsalted butter
- 1/2 tsp. saffron threads, crumbled
- kosher salt
- 1/4 c. extra-virgin olive oil

Dessert Crepes

- 1 c. all-purpose flour
- 1 Tb. sugar
- 1/2 tsp. salt
- 1/2 c. water
- 1/2 c. + 1 Tb. milk
- 2 eggs
- 2 Tb. butter, melted
- 3 Tb. frangelico
- 4 tsp. grated lemon zest
- Filling:
- 3 Tb. unsalted butter, melted
- powdered sugar
- berries, shaved chocolate, whipped cream or ice cream
- Cinnamon-Apple Filling:
- 1 c. (2 sticks) unsalted butter, softened
- 3 c. thinly sliced apples, (ripe apricots or small, whole blueberries)
- 6 Tb. light brown sugar
- 6 Tb. clover honey
- 3 Tb. frangelico
- 1 1/2 tsp. ground cinnamon
- 1 Tb. fresh lemon juice
- 1/4 c. toasted sliced almonds
- Nutella Filling:
- 1 (13 oz.) jar Nutella chocolate hazelnut spread
- 1/2 c. chopped, toasted almonds, (or hazelnuts)
- coffee ice cream
Low-fat Three-Cheese Quesadillas

1. Lightly spray an 8 or 10" nonstick skillet with cooking spray
- 2 (6") low-fat flour tortillas, (bonus if you buy whole wheat)
- 1 garlic clove, peeled and finely minced
- 1 tsp. chopped fresh Italian parsley
- 2 Tb. chopped tomato
- 2 Tb. chopped yellow bell pepper
- 2 oz. grated fat-free cheddar cheese
- 2 oz. grated fat-free mozzarella cheese
- 2 Tb. freshly grated Parmesan cheese
Chicken Satay

- 1/4 c. chopped green onions

- 3 Tb. chicken broth
- 3 Tb. butter, melted

- 1/2 tsp. crushed red pepper flakes
