Dark Chocolate Tea Bread

Cocoa powder is made from cocoa beans, which are native to the tropics
- 2 cups all-purpose flour
- 1/2 cup cake flour
- 3/4 cup unsweetened Dutch-process cocoa powder
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 5 Tbs. unsalted butter, at room temperature
- 4 oz. cream cheese
- 1 cup granulated sugar
- 2 eggs
- 1 1/4 cups buttermilk
- 1 1/2 tsp. vanilla extract
- 2/3 cup chopped toasted hazelnuts
- 1 Tbs. raw or coarse sugar
Gingered Edamame with Fire-Roasted

1. Heat oil in a large saute pan over medium heat
- 1 Tb. olive oil
- 1 c. finely chopped yellow onion
- 2 Tb. peeled and chopped fresh ginger
- 1 Tb. minced garlic
- 1 (14 oz.) can fire-roasted tomatoes, (such as Hunt's or Muir Glen)
- 2 Tb. soy sauce
- 1/4 c. chicken broth
- 2 c. shelled edamame
- 3 Tb. chopped fresh cilantro, opt.
Apple Crisp

Preheat oven to 350 degrees
- 1 c. packed brown sugar
- 1/2 c. all-purpose flour
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 c. butter , softened
- 5 c. peeled and sliced apples, 5-6 medium
- Toppings: whipped cream or vanilla ice cream
Chicken Enchiladas

Fry tortillas. Spoon mixture in tortillas and roll up
- Mix the following ingredients. It is better if you can let the mixture sit overnight.
- 2 (6 oz.) cans chicken
- 1 can cheddar cheese soup
- 1 can cream of chicken soup
- 1 medium onion, chopped
- 1 small can chopped green chilies
- chili powder to taste
- salt and pepper to taste
- 16 corn tortillas
- Toppings: Sour cream, Monterey Jack, cheese, black olives

- 7 cups sliced peeled tart apples
- 1 teaspoon lemon juice

- 4-1/2 teaspoons ground cinnamon

- 3 cloves garlic , minced
- 2 Tb. vegetable oil
- 1 tsp. salt
- 1/4 c. chopped fresh cilantro
- 4 c. (16 oz.) shredded Monterey Jack cheese, divided
- 1 c. vegetable oil
- 20 corn tortillas
- 8 poblano chile peppers
- 32 fresh tomatillos
- 3 c. chicken broth , divided
- 1 medium onion, chopped
- 4 cloves garlic , minced
- 6 romaine lettuce leaves, torn
- 1/2 c. chopped fresh cilantro
- 2 1/2 tsp. salt
- 8 oz. feta cheese, crumbled
- Red Pepper Puree:
- 5 sweet red peppers
- 1 tsp. salt
- Garnish: fresh cilantro leaves
