Pomegranate Margaritas

1. Stir together sugar and hot water until sugar is dissolved
- If possible use tequila labeled plata or silver, to balance the tart flavors of pomegranate and lime juices.
- 1/4 c. sugar
- 1/4 c. hot water
- 1 1/2 c. pomegranate juice
- 3/4 c. tequila
- 1/2 c. fresh lime juice, (about 6 limes)
- 1/4 c. orange liqueur, (such as Triple Sec)
- Garnishes: orange and lime slices
Cheesecake Dessert Squares

DIRECTIONS In a small bowl, combine the cracker crumbs, sugar and cinnamon; stir in butter
- FILLING:
- 2 cups graham cracker crumbs, (about 32 squares)
- 1/3 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1-1/2 cups sugar
- 1 teaspoon vanilla extract
- 4 eggs, separated
- Fresh fruit
Christmas Cornbread Muffins

Preheat oven to 375 degrees
- 1/2 lb. mild pork sausage
- 3/4 c. cornmeal
- 1/4 c. flour
- 1 Tb. baking powder
- 1 tsp. salt
- 2 eggs
- 1 c. sour cream
- 3/4 c. butter, softened
- 1 tsp. hot pepper sauce
- 1 (10 oz.) pkg. frozen corn, thawed
- 1 c. grated sharp Cheddar cheese
- 1/2 c. chopped sweet red bell pepper

To make the sauce, boil the vinegar,peppercorns, bay leaves, and lemon juice in a small pan until reduced by 2/3
- Hollandaise Sauce:
- 1 Tb. white wine vinegar
- pinch sea salt
- 2 large eggs
- 2 slices ham
- 1 English muffin
- 1 Tb. vinegar
- 6 black peppercorns, crushed
- 2 bay leaves
- a squeeze lemon juice
- 2 egg yolks
- 1 3/4 sticks butter, cut into small pieces
Popcorn Cake

Mix popcorn and peanuts in a large bowl
- 10 c. popped popcorn
- 1 1/2 c. cocktail peanuts
- 2 1/2 c. miniature marshmallows
- 1/4 c. butter
- 20 caramels
- 1 1/2 c. oil
- 2 c. M & M candies
Chocolate Angel Food Cake

Prepare cake mix according to pkg
- 1 pkg. angel food cake mix, (choose a 1 step mix; Betty Crocker is good)
- 1/3 c. unsweetened cocoa powder, (Ghiradelli and Droste are good)
Elephant Trunks

1. Stick popsicle sticks into cut ends of bananas and place on a baking sheet fitted with wax paper
- Be sure to mix in a little vegetable oil into the chocolate to keep it from getting overheated and clumpy.
- 10 popsicle sticks
- 5 bananas, cut in half
- 2 Tb. vegetable oil
- 24 oz. semisweet baker's chocolate, chopped
- Toppings: peanuts, coconut, or crushed vanilla wafers
Grilled Pizza

- Dough:
- 3/4 cup water
- 1 tablespoon olive oil
- 1 tablespoon Pizza Dough Flavor
- 2 tablespoons King Arthur Easy-Roll Dough Improver
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1 1/2 teaspoons instant yeast
- Topping:
- 2 tablespoons garlic oil, for topping
- 1 red pepper, seeded, roasted, skinned and sliced
- 1 onion, sliced
- 2 large portabello mushrooms, thinly sliced
- 1 to 2 cloves garlic, minced
- salt and pepper
- 1 cup shredded Asiago cheese
Hershey's Syrup Mudslide

1. Blend milk, coffee, chocolate syrup and vanilla in large bowl
- 3 c. milk
- 1 c. cold brewed coffee, (or use 1 1/2 tsp. instant coffee powder dissolved in 1 c.water)
- 3/4 c. Hershey's Syrup
- 1 qt. coffee-flavored or vanilla ice cream
- 1 tsp. vanilla extract
- 10 large ice cubes
Pico de Gallo

Toss together first 5 ingredients and, if desired, avocado in a medium bowl
- 2 medium tomatoes, seeded and diced
- 1/4 c. diced white onion
- 1 serrano or jalapeno pepper, seeded and finely chopped
- 2 Tb. lime juice
- 1 Tb. extra virgin olive oil
- 1 medium ripe avocado, (opt.) diced
- salt to taste
