Skillet Zucchini

Coat a large nonstick skillet with cooking spray, and place over medium heat
- olive-oil flavored cooking spray
- 1 tsp. minced garlic
- 2 medium zucchini
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tb. shredded Parmesan

1. Adjust oven rack to middle position and heat oven to 325 degrees
- Crust:
- 7 whole graham crackers, broken into 1" pieces
- 6 Tb. unsalted butter, melted and cooled
- 3 Tb. light brown sugar
- 2 Tb. all-purpose flour
- 1/8 tsp. table salt
- Filling:
- 2 (8 oz.) pkg. cream cheese, softened
- 2/3 c. granulated sugar
- 2 large eggs
- 1/4 c. sour cream
- 2 tsp. juice from 1 lemon
- 1 tsp. vanilla extract
Italian Sauteed Olives

In a 10" skillet, heat oil over medium heat
- 2 Tb. olive oil
- 2 Tb. chopped fresh parsley
- 1 medium green onion, chopped
- 1 tsp. crushed red pepper flakes
- 2 cloves garlic, finely chopped
- 1 c. kalamata olives, drained, pitted
- 1 c. Greek olives, drained, pitted
- 1 c. Gaeta olive , drained, pitted

- 1 egg, beaten with 1 Tbs. water
