Pork Loin Chops with Cinnamon Apples

1. Combine sage, salt and pepper; sprinkle over the pork
- 1 tsp. dried rubbed sage
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 4 (4 oz.) boneless center-cut pork chops, (about 1/2" thick)
- 1/2 tsp. canola oil
- 2 Granny Smith apples
- 1 tsp. butter, divided
- 1 Tb. brown sugar, divided
- 1 tsp. fresh lemon juice, divided
- 1/2 tsp. ground cinnamon, divided
- 1/8 tsp. salt, divided
Cheesy Grilled Cheese

Stir together butter and Parmesan cheese in a small bowl
- 1/4 c. butter, softened
- 1 Tb. grated Parmesan cheese
- 8 Italian bread slices
- 4 (3/4 oz.) slices provolone cheese
- 4 (3/4 oz.) slices mozzarella cheese
Christmas Salad

FOR THE SALAD: In a small skillet, cook onion in oil over medium heat until tender, approximately 10 minutes
- Salad:
- 1 small red onion, chopped
- 1 Tb. canola oil
- 1 (5 oz.) bag spring mix lettuces
- 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 1/2 c. walnuts, toasted
- 1 red pear, cored and sliced
- 1 green pear, cored and sliced
- Cranberry Vinaigrette:
- 1/4 c. fresh cranberries, or frozen cranberries, thawed
- 2 Tb. balsamic vinegar
- 2 Tb. sherry vinegar
- 1 Tb. sugar
- 1 tsp. Dijon-style mustard
- 1/4 tsp. dried thyme
- 1/4 tsp. dried rosemary
- 1 c. canola oil
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 c. Gorgonzola cheese
- Garnish: pomegranate seeds
Grilled Pork Ribs

1. Mix all dry ingredients in a bowl, and with your hands rub each sparerib rack generously with spice mixture
- 3/4 tsp. garlic powder
- 3/8 tsp. ground celery seed
- 6 tsp. smoked paprika
- 9 Tb. light brown sugar
- 1 1/2 tsp. cumin
- 1 1/2 tsp. cayenne pepper
- 3 Tb. salt
- 1 1/2 tsp. black pepper
- 3 pork sparerib racks
Mexican Red Rice

In a large saucepan, melt butter over medium-high heat
- 2 Tb. butter
- 1 c. chopped onion
- 2 cloves garlic, minced
- 2 c. long-grain rice
- 2 (14.5 oz.) cans fire-roasted diced tomatoes
- 3 c. chicken broth
- 3 tsp. chili powder
- 1 1/4 tsp. salt
- Garnish: fresh cilantro
Pork Medallions with Asian Black Bean Sauce

1. In a medium bowl whisk the marinade ingredients
- Marinade:
- 1/2 tsp. grated orange zest
- 1/4 c. fresh orange juice
- 1/4 c. Chinese rice wine, or dry sherry
- 2 Tb. soy sauce
- 1 Tb. hoisin sauce
- 1 Tb. minced fresh ginger
- 1 Tb. toasted sesame oil
- 1/4 tsp. crushed red pepper flakes
- 2 pork tenderloins, about 1 lb. each, trimmed of silver skin
- Sauce:
- 2 Tb. Chinese fermented black beans
- 1/2 c. low-sodium chicken broth
- 2 Tb. Chinese rice wine, or dry sherry
- 1 Tb. soy sauce
- 1 tsp. sugar
- 1 1/2 tsp. cornstarch
- 1 Tb. peanut or vegetable oil
- 2 tsp. peeled and minced fresh ginger
- 1 garlic clove, minced
- 2 Tb. fresh orange juice

- 1/2 cup grated Parmigiano-Reggiano cheese
- 1/2 cup Parmigiano-Reggiano cheese chunks, (1/4-inch chunks)
- Cornmeal as needed
