Beer-Cheese Spread

Beat together first 5 ingredients at low speed with a heavy-duty electric stand mixer until blended
- This recipe makes a lot, but you can freeze it for up to a month. It fits perfectly into 4 (10 oz.) ramekins. Try it over french fries, hot dogs, or chili.
- 1 (2 lb.) block sharp Cheddar cheese, shredded
- 1 small onion, minced
- 2 garlic cloves, minced
- 1/2 tsp. hot sauce
- 1/4 tsp. ground red pepper
- 1 (12 oz.) bottle amber beer, at room temperature
- salt and pepper to taste
- saltine crackers
- Garnish: sweet-hot pickle slices
Key Lime Pie

Preheat oven to 450 degrees
- Crust:
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1/2 c. vegetable shortening
- 1/4 c. cold water
- Filling:
- 4 egg yolks
- 1 can sweetened condensed milk
- 1/3 c. freshly squeezed key lime juice, (about 3 limes)
- opt. green food coloring
- Meringue:
- 4 egg whites
- 1/2 tsp. cream of tartar
- 1/2 c. granulated sugar
Petitie Sausage Quiches

In a large bowl, beat the butter, cream cheese and flour until smooth
- Filling:
- 1 c. butter, softened
- 2 pkg. (3 oz. each) cream cheese, softened
- 2 c. flour
- 6 oz. bulk Italian sausage
- 1 c. (4 oz.) shredded Swiss cheese
- 1 Tb. minced chives
- 2 eggs
- 1 c. half-and-half cream
- 1/4 tsp. salt
- dash cayenne pepper
Cheese Enchiladas

Soften tortillas in oil. Drain on paper towels
- 3 Tb. vegetable oil
- 8 corn tortillas
- 8 oz. shredded cheddar
- 8 oz. shredded Monterey Jack
- 1 can enchilada sauce
- 2 c. shredded lettuce
- 1 c. chopped tomatoes
- 1 c. sour cream
- 1/2 c. sliced black olives
Chipotle Shrimp Tacos

1. Combine 1st 5 ingredients in a large bowl; add shrimp, tossing to coat
- 2 tsp. chili powder
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
- 1/4 tsp. ground chipotle chile powder
- 32 peeled and deveined large shrimp, (about 1 1/2 lbs.)
- 1 tsp. olive oil
- 8 (6") white corn tortillas
- 2 c. shredded iceberg lettuce
- 1 ripe avocado, peeled and cut into 16 slices
- 3/4 c. salsa verde
Fresh Apple Bars

Beat sugar, oil and eggs together
- 1 3/4 c. sugar
- 1 c. oil
- 3 eggs
- 2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2 c. apples, peeled, cored, and sliced
- 1 c. chopped walnuts

- Graham Cracker Crust:
- 10-12 graham crackers
- 2 Tb. sugar
- 4 Tb. unsalted butter, melted
- Key Lime Filling:
- 4 large eggs
- 1 (14 oz.) can sweetened condensed milk
- 1/2 c. freshly squeezed lime juice, preferably from Key limes
- 1/2 c. sugar
Panang Chicken Curry with Basil

We used Panang curry paste by Taste of Thai that comes in foil bags in the ethnic section of the supermarket
- 1 (14-ounce) can light coconut milk
- 2 tablespoons panang curry paste, (1.75-ounce package)
- 1 tablespoon, plus 2 teaspoons fish sauce
- 1 tablespoon, plus 2 teaspoons dark brown sugar
- 1 tablespoon creamy peanut butter
- 1 tablespoon fresh lime juice
- 2 medium red bell peppers, seeded and sliced into 1/4-inch wide strips
- 1 red onion, peeled and cut in 1/4-inch wedges
- 1 rotisserie chicken, skin removed, shredded (about 3 cups)
- 1/4 cup chopped fresh basil
- 4 cups cooked jasmine or basmati rice

Combine flour, pepper, salt, aniseed, cinnamon, baking soda, allspice, cloves, and nutmeg in medium bowl
- 2 1/4 c. all-purpose flour
- 3/4 tsp. ground black pepper
