Quick Crackers

Cut each egg roll wrapper into 4 strips wit kitchen shears
- 1 (16 oz.) pkg. egg roll wrappers
- 3 Tb. olive oil
- 3 Tb. water
- 3/4 tsp. garlic salt
- 3/4 tsp. dried Italian herb seasoning
- 1/4-1/2 tsp. ground red pepper
- Parmesan cheese
Cheesy Orzo

Preheat a 8 inch pot with a tight fitting cover over moderate heat
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- .50 small onion, chopped
- 2 cloves garlic, chopped
- 2 cans chicken broth, can substitute vegetable broth/stock or chicken stock
- 2 cups orzo pasta, enriched rice may be substituted
- .50 cup grated Parmigiano, Romano can be substituted
Baked Spiced Fruit

Preheat oven to 350 degrees
- 1 (29 oz.) can peach halves in heavy syrup, drained
- 1 (20 oz.) can pineapple slices in fruit juice, drained, reserving 3/4 c. of juice
- 1 (14 oz.) jar spiced apple rings, drained
- 1/2 c. drained maraschino cherries
- 3/4 c. packed brown sugar
- 1/3 c. butter
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. curry powder
- 4 tsp. cornstarch
- 4 tsp. water
Fresh Peach Salsa

Saute first ingredients in hot oil in a large skillet over medium heat 5 minutes or until onion is tender
- 1 large sweet onion, chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 c. sugar
- 2 Tb. grated fresh ginger
- 2 Tb. olive oil
- 6 large peaches, peeled and chopped
- 1/4 c. fresh lemon juice
- 2 Tb. chopped fresh cilantro
- 1/4 tsp. salt
Grilled Pork Roast with Fruit Compote

- Fruit Compote:
- 1 (4 lb.) boneless pork loin roast, trimmed
- kitchen string
- 2 tsp. salt
- 1 tsp. pepper
- 2 Tb. chopped garlic
- 1 Tb. finely chopped fresh rosemary
- 1 Tb. chopped fresh thymer
- 2 Tb. olive oil
- 16 dried Mission figlets, quartered (or 12 dried Mission figs, coarsely chopped)
- 1 Granny Smith apple, diced
- 12 dried apricots, thinly sliced
- 1/2 c. seedless grapes, halved
- 1/2 c. chopped red onion
- 1/2 c. dry white wine
- 1/2 c. cider vinegar
- 1 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
Parmesan-Cayenne Scones

- 6 c. flour
- 6 tsp. baking powder
- 5 tsp. salt
- 1 tsp. coarse black pepper
- 2 Tb. cayenne pepper
- 1 c. cold butter, cut into squares
- 4 c. grated Parmesan cheese
- 2 c. milk
- 1 c. buttermilk
- 4 eggs
Pork Piccata

In a shallow dish, combine flour, salt and pepper
- 1/2 c. flour
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 12 pork cutlets, (about 2 1/2 lbs.)
- 1/4 c. olive oil, divided
- 1/2 c. dry white wine
- 1 c. chicken broth
- 3/4 c. seeded and chopped tomatoes
- 2 Tb. fresh lemon juice
- 1 Tb. chopped fresh parsley
- 1 Tb. capers
- 1 (16 oz.) pkg. orzo, cooked and kept warm
Grilled Salmon

1. Season salmon fillets with lemon pepper, garlic powder, and salt
- 1 1/2 pounds salmon fillets
- lemon pepper to taste
- garlic powder to taste
- salt to taste
- 1/3 cup soy sauce
- 1/3 cup brown sugar
- 1/3 cup water
- 1/4 cup vegetable oil
Parmesan-Garlic Popcorn Spice

- 1 tsp. dried tarragon
