Cucumber Spread

Grate peeled cucumber and onion into mixing bowl
- 1 large cucumber
- 1/4 c. onion, grated
- 1 (8 oz.) pkg. cream cheese, room temperature
- 1/2 c. mayonnaise
- dash Tabasco
- 1 drop green food coloring, opt.

- 1 1/4 c. all-purpose flour
- 1 c. Rice Krispies
- 3/4 c. cornstarch
- 1/4 c. sugar
- 1 tsp. baking powder

- 2 large eggs, separated
- 1 1/2 c. milk
- 1 tsp. vanilla extract
- 1/3 c. vegetable

- Starter:
- 1 cup (4 1/4 ounces) King Arthur Unbleached All-Purpose Flour
- 1/3 cup (2 5/8 ounces) cool water
- pinch of instant yeast
- Mix together, cover, and let rest at room temperature overnight.
- Dough:
- all of the starter
- 2 cups (8 1/2 ounces) King Arthur Unbleached All-Purpose Flour
- 1 1/4 teaspoons salt
- 2 tablespoons Baker?s Special dry milk or nonfat dry milk
- 2 teaspoons instant yeast
- 2/3 cup (5 1/4 ounces) lukewarm water
- 2 tablespoons (7/8 ounce) olive oil
- Topping:
- 1/2 cup (2 1/4 ounces) sesame seeds
- 1 large egg white beaten with 1 tablespoon cold water
Apple-Filled Turnovers

FOR THE TURNOVERS: Line a baking sheet with parchment paper
- c. Apple Pie Filling:
- 1 1/2 lbs. frozen puff pastry
- 1 egg
- 2 Tb. cream, or milk
- 1/4 c. applejack, or apple-flavored brandy
- 1/4 c. apple juice
- 3 Tb. canola oil, divided
- 4 c. Granny Smith apples, peeled, cored, and sliced
- 6 Tb. sugar
- 3 Tb. currants
- 1/4 tsp. orange zest
- 1/2 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
- c. Apricot Glaze:
- 3/4 c. apricot jam
- 3/4 c. water
- 3/4 c. corn syrup
- 1/3 c. brandy
Asiago Wafers

1. In a large bowl, combine flour, snipped rosemary, salt, garlic powder and white pepper
- 1 1/2 c. flour
- 1 Tb. finely snipped fresh rosemary
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. ground white pepper
- 6 Tb. cold butter, cut into 18 pieces
- 2 c. finely grated Asiago cheese, (8 oz.)
- 2 Tb. milk
- 1/2 c. sour cream
- fresh rosemary leaves, opt.
- 2 egg whites, slight beaten (opt.)
Chocolate Pannini

Preheat pannini press according to manufacturer's instructions
- 1 (8 oz.) loaf ciabatta bread
- 2-3 Tb. olive oil
- 1 (4 oz.) bittersweet chocolate baking bar, coarsely chopped (we tested with Ghiradelli)
Cucumber Tea Sandwiches with Mint-Chile Butter

1. Combine first 4 ingredients, stirring until well blended
- Use this recipe as a template, and customize this sandwich according to your preferences. Instead of using watercress, try adding baby lettuce greens or thinly sliced poached breast.
- 6 Tb. butter, softened
- 3 Tb. chopped fresh mint
- 1/4 tsp. salt
- 1 serrano chile, seeded and finely chopped
- 12 (1oz.) slices sandwich bread
- 1 1/2 c. sliced seeded peeled cucumber
- 1 Tb. fresh lime juice
- 1 c. trimmed fresh watercress
Caramel Peaches

Place peaches in a lightly greased 11x7x11/2" baking dish; sprinkle with sugar, and dot with butter
- 6 large peaches, peeled and sliced (6 c.frozen sliced peaches, thawed, may be substituted)
- 3 Tb. sugar
- 1/4 c. butter , cut into small pieces
- 1 c. whipping cream
