- 2 Tb. fresh ginger, peeled and grated
- 2 Tb. lemon juice

- 2 1/4 lbs. skin-on salmon fillets

Grilled Glazed Tuna Steaks

Combine first 5 ingredients in a 1-cup glass measure; microwave, uncovered, at HIGH 1 minute or until mixture boils
- 1/3 c. dry sherry
- 1 Tb. peeled minced gingerroot
- 1 Tb. soy sauce
- 1 tsp. honey
- 1 clove garlic, minced
- 1 lb. tuna steaks, cut into 4 pieces
Coffee Shake

Combine the instant coffee, milk, vanilla extract, sugar, ice, and chocolate syrup in a blender; blend until smooth
- This is a blended-coffee treat much like an iced cappuccino you might buy at a restaurant. You can make it non-dairy by using soy milk. It can be made lighter by using Splenda and sugar-free chocolate
- 1 tsp. instant coffee granules
- 3/4 c. milk
- 1 tsp. vanilla extract
- 2 tsp. white sugar, or to taste

Cucumber Salad with Marinated Red Onion and Fresh Herbs

1. For the Marinade: Combine sugar, vinegar, and water in a glass or plastic bowl and mix to combine
- Marinade:
- Hothouse cucumbers are best for this salad becasue they have more flesh and fewer seeds. They also have a thinner, less-waxy skin and tend to be a little crisper than your average cucumber.
- 1 c. sugar
- 1 c. red wine vinegar
- 1 c. water or olive oil
- 2 large red onions, sliced thin
- Salad:
- 3 cucumbers
- 1/4 c. olive oil
- juice of 2 lemons
- 1/2 c. fresh dill leaves
- salt and black pepper to taste
Grilled Halibut with Cilantro Garlic Butter

- 4 (6 ounce) fillets halibut
- 1 lime, cut into wedges
- salt and pepper to taste
- 3 cloves garlic, coarsely chopped
- 1/2 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 2 tablespoons butter
- 1 tablespoon olive oil
