German Apple Streusel Kuchen

Let dough rise according to package directions
- 1 loaf frozen bread dough, thawed
- 4 Granny Smith apples, cored, peeled and thinly sliced
- 3/4 c. + 1/3 c. sugar, divided
- 1 tsp. cinnamon
- 1 Tb. vanilla
- 1/4 c. sliced almonds
- 1/4 c. butter, melted
- 1 1/4 c. flour
Potato Cobb Salad

1. Cook potatoes in boiling salted water to cover 30 minutes or until tender
- The potatoes can be cooked and marinated overnight so they are ready to assemble just before serivng.
- 3 lb. Yukon gold potatoes
- 3/4 tsp. salt
- 1 (16 oz.) bottle olive oil and vinegar dressing, divided
- 8 bacon slices
- 8 c. mixed salad greens
- 2 large avocados
- 1 Tb. fresh lemon juice
- 3 large tomatoes, seeded and diced
- 12 small green onions, sliced
- 2 c. shredded sharp cheddar cheese
- 4 oz. crumbled blue cheese
- freshly ground pepper to taste
Shrimp Mojo de Ajo

1. For the Mojo de Ajo: Heat oil in a 2 qt
- Mojo de Ajo:
- 3/4 3/4 3/4 c. olive oil
- 3 3 3 whole quajillo chiles*
- 3/4 3/4 3/4 c. jarred minced garlic
- 5 5 5 Tb. fresh lime juice
- 1 1/2 1 1/2 1/2 tsp. salt
- Shrimp Mojo de Ajo:
- 24 24 24 unpeeled, large raw shrimp, (21/15 ct.)
- 1/2 1/2 1/2 c. Mojo de Ajo
- 24 24 24 (6") skewers
- Garnishes: lime wedges, fresh cilantro sprigs, coarse sea salt
Apple Cream Cheese Coffeecake

Cream 1/2 c. brown sugar and margarine at medium speed of electric mixer until light and fluffy (about 5 minutes)
- 1/2 c. firmly packed brown sugar
- 1/4 c. margarine, softened
- 1 egg
- 2 egg whites
- 1/2 c. plain low-fat yogurt
- 1/2 c. unsweetened applesauce
- 1 3/4 c flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 4 oz. light process cream cheese product, softened
- 1 1/2 Tb. skim milk
- 1 1/2 c. peeled chopped Granny Smith apple, divided
- 1/4 c. firmly packed brown sugar
Chocolate Raspberry Shake

Directions: Place all ingredients in the blender and mix thoroughly until the ice cubes are completely crushed
- A taste sensation, combining Dutch chocolate and raspberries!
- 2 scoops Dutch Chocolate Formula 1 Nutritional Shake Mix
- 2 tablespoons Personalized Protein Powder, (or more)
- 1 cup plain soy milk or nonfat milk
- 1 cup frozen raspberries
- 1/8 teaspoon orange extract
- 4 ice cubes
Curried Chicken Corn Chowder

In a Dutch oven, saute onions and celery in butter until tender
- 2 medium onions, chopped
- 2 celery ribs, chopped
- 1 Tb. butter
- 3 cans (14 1/2 oz.) chicken broth
- 5 c. frozen corn
- 2 tsp. curry powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- dash cayenne pepper
- 1/2 c. flour
- 1/2 c. 2% milk
- 3 c. cubed cooked chicken breasts
- 1/3 c. minced fresh cilantro

- 1 cup water
- 1/8 teaspoon instant yeast
- Dough:
- biga (from above)
- 1 tsp. instant yeast
- 1 1/2 c. King Arthur Unbleached All-Purpose Flour
- 1 1/4 tsp. salt
- 1 tsp. sugar
- 1 Tb. Baker?s Special Dry Milk or nonfat dry milk
- 1/4 c. water
- 2 Tb. olive oil
Romaine, Blueberry and Strawberry Salad

In a small saucepan combine almonds and sugar
- Red Onion Vinaigrette:
- 1/2 c. sliced almonds
- 1 Tb. sugar
- 3 c. romaine lettuce, torn into bite-size pieces
- 3 c. iceberg lettuce, torn into bite-size pieces
- 1 c. fresh blueberries
- 1 c. fresh strawberries, sliced
- crumbled feta cheese, or blue cheese
- 1/4 c. extra-virgin olive oil
- 1/4 c. canola oil
- 1/4 c. red wine vinegar
- 2 Tb. honey
- 1 Tb. grated red onion and juice
- 1 tsp. coarse ground mustard
- 1/4 tsp. salt
- several dashes ground black pepper

- 4 chicken bouillon cubes
