Bacon and Cheddar Omelette for Six

This generously sized omelette is designed to feed a crowd
- 12 eggs
- 1/3 cup water
- 3 Tbs. unsalted butter
- 4 green onions, thinly sliced diagonally
- 1 or 2 pinches salt
- 1 cup grated cheddar cheese
- 8 oz. bacon, cooked until crispy and roughly chopped
Chocolate Pots de Creme

- 1/4 c. seasoned rice vinegar
- 4 tsp. sugar
- 1-2 tsp. Chinese chili paste, (use the larger amount for a spicier flavor)
- 1/2 tsp. red chile pepper flakes
- 1 tsp. chili oil
- 2 (10 oz.) pkg. Chinese wheat or egg noodles
- 3 c. slivered snow peas, (about 1/2 lb.)
- 3 c. diced red bell pepper, (about 1 lb.)
- 1 c. chopped fresh cilantro
- 2 Tb. toasted sesame seeds
- 3-4 c. shredded roast chicken, (or cooked shrimp)
Curried Beef, Pork or Chicken

Preheat to 375 degrees. Toss meat in corn flour until evenly coated
- 1 1/4 lb. lean beef, pork or chicken, cubed
- 2 oz. corn flour
- 4 Tb. ghee or clarified butter
- 4 garlic cloves, sliced
- 1 (2") cube fresh ginger, sliced
- 1 Tb. hot curry
- 2 onions, sliced
- 2 oz. Mongolion fire oil
- 1 c. chicken stock, or water
- 4 bay leaves
- 8 oz. pineapple chunks, and it's juice
- 4 oz. oyster mushrooms, sliced
- 6 oz. buttermilk
- 4 oz. sour cream
- salt

Garlic-Thyme Focaccia

1. Dissolve sugar and yeast in 1 c
- This can easily be made a day in advance; wrap in aluminum foil to reheat.
- 1 tsp. sugar
- 1 pkg. dry yeast
- 1 c. warm water, (100-110 degrees)
- 1/2 tsp. fine sea salt
- 10.5 oz. + 2 Tb. all-purpose flour, divided (about 2 1/3 c.)
- 1 Tb. olive oil
- 2 garlic cloves, thinly sliced
- 1 Tb. chopped fresh thyme
- 3/4 tsp. coarse sea salt
Havarti Fondue with Croutons

- Croutons:
- Croutons may be made one day in advance and stored in an airtight container.
- 1 loaf French bread, cut into 1" cubes
- 1/4 c. butter, melted
- 1/4 c. grated Parmesan

- 1/4 c. cornstarch
- 3 Tb. water
- 1 (16 oz.) bottle white cooking wine
- 1/2 tsp. garlic powder
- 2 Tb. freshly squeezed lemon juice
- 6 c. (1 1/2 lbs.) shredded Harvarti cheese
- 2 c. (8 oz.) shredded Gruyere cheese
- 1/3 c. cooking sherry
- 1/4 tsp. ground white pepper
Prosciutto and Asparagus Melts

- pinch of salt
- 20 asparagus tips
- 20 slices skinny baguette
- olive oil, for brushing
- 20 bite-size slices of mozzarella
- 10 slices prosciutto, cut in half
Light and Quick Tortilla Soup

1. Heat oil in a large saucepan over medium heat
- 1 c. baked tortilla chips
- 1 Tb. canola oil
- 3 Anaheim or poblano pepper, diced
- 1 medium onion, diced
- 1 tsp. ground cumin
- 1 lb. boneless, skinless chicken thighs, trimmed and cut into 1" pieces
- 4 c. chicken broth
- 1 (14oz.) diced tomatoes with green chilies
- 2 Tb. lime juice
- 1/2 c. shredded sharp Cheddar cheese
- 1/4 c. chopped fresh cilantro
Potato Chip Chicken Finger Roll-Ups with Carrot Ribbons

- Chicken Fingers:
- If you want, change up the sauce in these roll-ups; honey mustard, salsa and hummus are great.
- 20 chicken tenders
- 1 c. flour
- 3 eggs
- 1/3 c. milk
- 1 (14 oz.) bag potato chips
- Roll-Ups:
- 10 flour tortillas
- 1 carrot, peeled
- 10 leaves Boston lettuce, (or similar greens with soft leaves)
- 1 c. Ranch dressing
Curried BLT Sandwiches

- 8 slices oatmeal bread, lightly toasted
- 12 slices bacon, cooked and crumbled
- 1/4 c. raisins
- 1/4 c. cashew nuts, coarsely chopped

- 2 Tb. mayonnaise or salad dressing
- 2 Tb. sour cream
