Caramel Pecan Pie

In a bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs
- Filling:
- 1 2/3 c. flour
- 1/4 tsp. salt
- 1/2 c. cold butter
- 1/3 c. sweetened condensed milk
- 2 egg yolks
- 1 1/2 c. sugar
- 1/2 c. + 2 Tb. butter
- 1/3 c. maple syrup
- 3 eggs
- 3 egg whites
- 1/2 tsp. vanilla extract
- 2 c. ground pecans
Apple-Walnut Bread

- 2/3 c. chopped walnuts
- 2 1/2 c. all-purpose flour
- 1 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 1/2 tsp. grated orange zest, divided
- 2 eggs
- 3/4 c. fresh orange juice
- 1/2 c. walnut or vegetable oil

- 1/2 tsp. baking soda
- 1/2 tsp. baking powder

- 3/4 c. whole buttermilk

- 1 (12 oz.) pkg. semisweet chocolate morsels
- 1/2 c. butter
- 2 c. powdered sugar

Confetti Cheese Omelet

Heat a 10" nonstick skillet coated with cooking spray over medium heat
- 1/4 c. chopped red bell pepper
- 1/4 c. chopped green or orange bell pepper
- 1/4 c. sliced green onions
- 1 c. egg substitute
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 c. shredded reduced-fat Cheddar cheese

- 3 c. self-rising soft wheat flour
- 1/4 tsp. baking soda
- 1 tsp. sugar
- 1/2 c. butter-flavored shortening
- 1 1/4 c. buttermilk
- butter, melted
- 1/2 lb. ground pork sausage
- 1/4 c. butter
- 1/3 c. all-purpose flour
- 3 1/4 c. 1% low-fat or whole milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/8 tsp. dried Italian seasoning
Light Fettucine Alfredo

- 2 Tb. 1/3-less-fat cream cheese
- 1/2 tsp. salt
- 4 c. hot cooked fettucine, 8 oz. uncooked pasta
- 2 tsp. chopped fresh flat-leaf parsley

Chicken Breasts with Lemon Caper Sauce

- Chicken Breasts:
- 4 skinless, boneless chicken breasts
- 1 1/2 Tb. olive oil
- 1 1/2 Tb. butter
- flour for dipping
- Lemon Caper Sauce:
- 1 c. chicken stock
- 1/4 c. fresh lemon juice
- 1 shallot, minced
- 2 Tb. capers
- 3 Tb. butter
Corn and Avocado Salad

Directions: 1. Saute bacon in a large, deep skillet over medium high heat until evenly brown
- 8 slices bacon
- 2 heads butterhead lettuce
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
- 4 ears sweet corn, cut off the cob
- 2 avocados, peeled, seeded and cubed
- 2/3 cup red wine and vinegar salad dressing
- 3 tablespoons blue cheese salad dressing
- 2 tablespoons honey
Curried Chicken Corn Chowder

- 2 celery ribs, chopped

- 3 cans (14 1/2 oz.) chicken broth
- 5 c. frozen corn

- 1/4 tsp. pepper
- dash cayenne pepper
- 1/2 c. flour
- 1/2 c. 2% milk
- 3 c. cubed cooked chicken breasts
- 1/3 c. minced fresh cilantro
