Breakfast Enchiladas

Serve this tasty breakfast dish alongside ingredients such as pico de gallo, tomatillo salsa, and sliced jalapeños
- Cheese Sauce:
- 1 (1 lb) pkg. hot ground pork sausage
- 2 Tb. butter
- 4 green onions, thinly sliced
- 2 Tb. Chopped fresh cilantro
- 14 large eggs, beaten
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 8 (8-inch) flour tortillas
- 1 c. (4 oz) shredded pepper Jack cheese
- Toppings: halved grape tomatoes, sliced green onions, chopped fresh cilantro
- 1/3 c. butter
- 1/3 c. flour
- 3 c. milk
- 2 c. (8 oz.) shredded Cheddar cheese
- 1 (4.5 oz) can chopped green chiles, undrained
- 3/4 tsp. salt
Caramel Pumpkin Cupcakes (skinny)

Preheat oven to 350 degrees
- For Cupcakes:
- 2 c. moist-style yellow cake mix, (1/2 of an 18.25 oz. box)
- 1 c. canned pure pumpkin
- 1/3 c. fat-free liquid egg substitute
- 2 Tb. sugar-free maple syrup
- 2 tsp. cinnamon
- 2 tsp. Splenda granulated
- 1/8 tsp. salt
- For Topping:
- 3 cubes chewy caramel, (about 1 ounce)
- 2 tsp. light vanilla soymilk
All-I-Want-For-Christmas Gingerbread with Hard Sauce

Preheat oven to 350 degrees
- Hard Sauce:
- 1/2 c. (1 stick) unsalted butter, at room temperature
- 3/4 c. sugar
- 1 c. dark molasses
- 2 eggs, beaten
- 2 1/2 c. all-purpose flour
- 1 Tb. ground ginger
- 1 tsp. ground cinnamon
- 1 tsp. ground cloves
- 1 c. boiling water
- 2 tsp. baking soda
- 1 c. unsalted butter, at room temperature
- 2 c. powdered sugar, sifted
- 1/2 tsp. grated lemon zest
- 1 Tb. fresh lemon juice, or heavy cream
- Whipped Cinnamon Cream:
- 2 c. chilled heavy cream
- 1/4 c. + 2 Tb. sugar
- 2 tsp. vanilla
- 2 tsp.-2 Tb. ground cinnamon
Chicken Caesar Salad

Instructions 1. For the croutons: Adjust oven rack to middle position and heat oven to 350 degrees
- Garlic Croutons:
- 2 large cloves garlic, minced fine or pressed through garlic press
- 1/4 tsp. table salt
- 3 Tb. extra-virgin olive oil
- 3 c. 3/4-inch bread cubes from 1 baguette or country loaf
- Broiled Chicken Breasts:
- 6 Tb. kosher salt or 3 tablespoons table salt
- 3 Tb. granulated sugar
- 4 boneless, skinless chicken breast halves, (about 6 ounces each), trimmed of excess fat
- Ground black pepper
- Caesar Dressing:
- 2 large eggs
- 2 Tb. lemon juice, plus 2 more teaspoons from one lemon
- 1 tsp. Worcestershire sauce
- 1/4 tsp. table salt
- 1/8 tsp. ground black pepper
- 1 medium clove garlic, minced fine or pressed through garlic press (about 1 teaspoon)
- 4 anchovy fillets (flat), minced (about 1 1/2 teaspoons)
- 1/3 c. extra-virgin olive oil
- Salad:
- 2 medium heads romaine lettuce, (large outer leaves removed) or 2 large romaine hearts; washed, dried, and torn into 1 1/2-inch pices (about 10 cups lightly packed)
- 1/3 c. grated Parmesan cheese
Curried Fruit for Ham

Drain fruit. Melt butter; add curry powder and sugar and drizzle over fruit
- 1 large can pears
- 1 large can peaches
- 1 large can pineapple chunks, or tidbits
- 1 jar maraschino cherries
- 1/2 c. butter
- 2 Tb. curry powder
- 1/2 c. brown sugar
Jumbo Cinnamon Rolls

DIRECTIONS Let rolls rise in a warm place until doubled, about 45 minutes
- HONEY BUTTER:
- 4 frozen Texas-size dinner rolls
- 2 tablespoons butter, melted
- 1/4 cup coarsely chopped pecans
- 2 tablespoons sugar
- 3/4 teaspoon ground cinnamon
- 2 tablespoons butter, softened
- 2 teaspoons honey
Tropical Fruits with Mint and Spices

This flavorful mix of six different fruits is as colorful as it is nutritious
- FOR THE SYRUP
- 1 1/2 c. fresh orange juice
- 3 Tb. fresh lemon juice
- 1/4 c. dark honey
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground coriander
- 1 vanilla bean, split lengthwise
- 1 lg. cantaloupe, 3 lb, halved and seeded
- 1 lg. banana, peeled and sliced crosswise
- 1 tsp. fresh lemon juice
- 1 c. blueberries or raspberries
- 2 lg. kiwifruits, peeled and cut into 1/2" dice
- 1 papaya, halved, seeded, peeled, and cut into 1/2" dice
- 1 Tb. grated lemon zest
- 5 or 6 fresh mint leaves
Corn Bread Salad

In a large bowl, combine all ingredients
- 6 c. crumbled corn bread
- 1 lb. bacon, cooked, drained, and crumbled
- 2 c. shredded Cheddar cheese
- 2 large tomatoes, chopped
- 1 (17 oz.) can whole kernel corn, drained
- 1 c. mayonnaise
- 1/2 c. chopped green onions
- 1/2 c. chopped green pepper
Curry Shrimp Creole

1. Saute onion, bell pepper, celery and garlic in oil in a large skillet until crisp-tender
- 2 onions, chopped
- 1 bell pepper, cut in 1" pieces
- 1 stalk celery, sliced
- 1 clove garlic, minced
- 1 Tb. vegetable oil
- 1 (16 oz.) can whole tomatoes, UNdrained and chopped
- 1/4 c. minced fresh parsley
- 1/4 c. catsup
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. hot sauce
- 1/4 tsp. curry powder
- 1/4 tsp. dried whole thyme, crushed
- 3/4 lb. medium fresh shrimp
