Baby Bagels

Smaller, taller bagels are light-textured, perfect for toasting, and make a lovely snack-sized serving
- Starter:
- 1 c. Sir Lancelot Hi-Gluten Flour
- 1/2 c. cool water
- 1/16 tsp. instant yeast
- Dough:
- all of the starter (above)
- 1 c. lukewarm water
- 2 tsp. salt
- 3 1/2 c. Sir Lancelot Hi-Gluten Flour
- 1 Tb. non-diastatic malt powder or brown sugar
- 1 1/2 tsp. instant yeast
- Water bath for steaming:
- 4 about 4 cups water
- 1 tablespoon non-diastatic malt powder or brown sugar
- Topping:
- Everything Bread and Bagel Topping, or poppy, sesame, or caraway seeds, or the topping seeds of your choice, optional
Coconut Cake

Grease and flour 3 (8 inch) round cake pans
- Coconut Cream Frosting:
- 3 large eggs
- 1 (8oz.) sour cream
- 3/4 c. vegetable oil
- 3/4 c. cream of coconut
- 1/2 tsp. vanilla
- 1 pkg. white cake mix with pudding
- 1 (8 oz.) cream cheese, softened
- 1/2 c. butter, softened
- 1 tsp. vanilla
- 1 (16 oz.) powdered sugar, sifted
- 1 (7 oz.) can coconut
Garlic-Cheese Grits

Bring water and salt to a boil in a large Dutch oven; gradually stir in grits and garlic
- 3 1/2 qts. water
- 1 1/2 Tb. salt
- 4 c. quick-cooking grits, uncooked
- 5 garlic cloves, minced
- 1 (2 lb.) loaf pasteurized prepared cheese product, cubed
- 1 c. half and half
- 2/3 c. butter
- ground red pepper or paprika to garnish
Caramel Fudge Cutouts

Line a 9" square pan with foil, allowing foil to extend over edges of pan
- 2 c. sugar
- 1/4 c. cocoa
- 3/4 c. milk
- 2 Tb. light corn syrup
- 1/4 c. + 2 Tb. butter , divided
- 8 caramels, chopped
- 3/4 c. chopped skinned hazelnuts or pecans
- 2 tsp. vanilla extract
Croissant French Toast

1. Preheat the oven to 350 degrees
- butter, for greasing
- 1 c. sugar
- 1/4 c. + 2 Tb. pure maple syrup
- 2 c. whole milk
- 2 large eggs
- 5 croissants, cut in half horizontally
Garlic-Gruyere Mashed Potatoes

Peel potatoes; cut into 1" cubes
- 6 medium potatoes, (3 1/2 lbs.)
- 3/4 c. hot milk
- 1/2 c. sour cream
- 1/4 c. butter, softened
- 1/2 tsp. salt
- 1/8 tsp. ground red pepper
- 1 garlic clove, minced
- 1/4 c. shredded Gruyere cheese
- 2 green onions, thinly sliced
- 1/3 c. chopped baked ham, optional
- Garnish: sliced green onions
Au Gratin Potato Soup

Place water, diced potatoes and butter together in a 5-6 qt
- 8 c. water
- 6 large russet potatoes , (unpeeled; 4 diced, 2 quartered lengthwise, then sliced 1/4" thick)
- 4 Tb. butter
- 1 c. green onion, chopped
- 1 Tb. broth powder, (Jensen's)
- 1 tsp. garlic
- 1 tsp. bacon bits
- 3/4 lb. grated cheddar, (3 c. packed)
- 1 1/2 tsp. paprika
Coconut Curry Chicken

In a medium saucepan, bring 3 1/4 cups of salted water to a boil
- 1 1/2 c. white rice
- 2 tsp. curry powder
- One 13.5 oz. can coconut milk
- 4 skinless, boneless chicken breasts, cut into strips
- 2 tsp. five-spice powder
Lemon-Glazed Miniature Cakes

Preheat oven to 350 degrees
- 1 c. butter
- 1 3/4 c. sugar
- 2 large eggs
- 2 tsp. vanilla
- 3 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 3/4 c. + 2 Tb. buttermilk
- 3/4 c. + 2 Tb. powdered sugar
- 2 Tb. fresh lemon juice
- Toppings: spray whipped topping and 36 candied lemon peels
Slow-Cooker Cocoa
