  • Dough:
  • all of the starter (above)
  • 1 c. lukewarm water
  • 2 tsp. salt
  • 3 1/2 c. Sir Lancelot Hi-Gluten Flour
  • 1 Tb. non-diastatic malt powder or brown sugar
  • 1 1/2 tsp. instant yeast
  • Water bath for steaming:
  • 4 about 4 cups water
  • 1 tablespoon non-diastatic malt powder or brown sugar
  • Topping:
  • Everything Bread and Bagel Topping, or poppy, sesame, or caraway seeds, or the topping seeds of your choice, optional
