Ranch Tortilla Roll-Ups

Mix cream cheese and ranch dressing mix together until smooth; spread on one side of each tortilla
- 8-oz. pkg. cream cheese, softened
- 1-oz. env. ranch dressing mix
- 4 10" or 12" flour tortillas
- 2 tomatoes, chopped
- 2 1/4 oz. can sliced black olives, drained and chopped
- 2 Tb. bacon bits
- 1 c. shredded Cheddar cheese
Cheesy Squash

Cut zucchini and squash into 1/4" slices
- 2 small zucchini
- 2 small squash
- salt and pepper to taste
- 2 c. shredded Mozzarella
- 1/2 c. Parmesan
Couscous Salad

Bring water to boil in a medium saucepan; gradually stir in couscous
- 1 c. water
- 1 c. couscous
- 1/2 c. sliced radishes
- 1/2 c. crumbled feta
- 1/4 c. chopped red onion
- 2 Tb. chopped fresh parsley
- 1 Tb. chopped fresh mint
- 1 Tb. extra-vrigin olive oil
- 2 tsp. fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
Holiday Pork Posole

1. Preheat oven to 350 degrees
- The pork needs time to cook and chill, so be sure to begin this recipe at least one day ahead. Put out a platter of cornbread along with the posole.
- 4 medium onions, divided
- 7 Tb. canola oil, divided
- 4 Tb. ancho chile powder, divided
- 2 Tb. + 2 tsp. dried oregano, (preferably Mexican), divided
- 1 (6-6 1/2) lb. bone-in pork shoulder (Boston butt), cut into 4-5" pieces, some meat left on bone
- 5 c.+ chicken broth
- 4 (7 oz.) cans diced green chilies, drained
- 5 large garlic cloves, minced
- 4 tsp. ground cumin
- 4 (15 oz.) cans golden or white hominy, drained
- 4 limes, each cut into 4 wedges
- thinly sliced green onion
- chopped fresh cilantro
Corn Chowder

Try topping servings with finely chopped green pepper or chives
- 1/4 c. butter
- 3 c. onion, finely chopped
- 4 c. vegetable broth
- 3 c. potatoes, peeled and cubed
- 4-5 cloves garlic, minced
- 1 1/8 tsp. pepper
- 1/4 tsp. celery seed
- 1 Tb. sugar
- 2 12-oz. cans corn
- 4 c. milk
Chocolate Caramel Fondue with Fresh Fruit

1. Fill medium pot halfway with water
- Good idea: You can also dip strawberries or dried apricots into fondue and chill in the refrigerator to make delicious caramel-covered fruit.
- 2 (3 oz.) pkg. Weight Watchers Caramel Medallions
- 1/4 c. fat-free milk
- 2 1/2 c. mixed sliced fruit, (strawberries, banana, apple)
Extreme Chocolate Pie

1. Preheat oven to 350 degrees
- 1 (8 oz) pkg. brownie mix
- 6 oz. unsweetened chocolate
- 1 c. sugar
- 3/4 c. butter
- 1 tsp. vanilla
- 3/4 c. refrigerated or frozen egg substitute, (or 3/4 c. pasturized eggs)
- sweetened whipped cream
- 1 (1.45 oz.) bar dark sweet chocolate, shaved or coarsely chopped
