Pork Tacos with Slaw and Spicy Pepitas

1. Combine first 6 ingredients in a small bowl
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. ground ancho or chipotle chili powder
- 1/2 tsp. black pepper
- 1 lb. boneless center-cut loin pork chops, (about 1/2" thick)
- 1/4 c. fresh lime juice, divided
- 1/2 c. sliced red bell pepper
- 2 Tb. thinly sliced green onions
- 1 Tb. minced jalapeno pepper
- 1/2 (16 oz.) pkg. coleslaw , (about 3 cups)
- 12 (6") white or yellow corn tortillas
- 6 Tb. light sour cream
- 6 Tb.Spicy Pepitas
- 1 c. unsalted pumkinseed kernels
- 1 Tb. canola oil
- 1/2 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. ground ancho or chipotle chili pepper
- 1/4 tsp. balck pepper
Grilled Shrimp with Fiery Lemongrass-Chile Sambal

Sambal: Combine 6 Thai bird chilies (or serrano or jalapeno chilies) and next 12 ingredients in processor
- Sambal:
- 6 (or m serrore) Thai bird chilies, or 2 (or more) serrano or jalapeno chllies (preferably red), seeded, coarsely chopped
- 1 1/2 c. coarsely chopped shallots
- 1/4 c. chopped peeled fresh ginger
- 3 Tb. chopped lemongrass, (from bottom 4" of 2 large stalks)
- 6 macadamia nuts
- 4 garlic cloves, coarsely chopped
- 2 tsp. packed golden brown sugar
- 2 tsp. tumeric
- 1 1/2 tsp. salt
- 1 tsp. ground coriander
- 1 tsp. paprika
- 1 bay leaf, crumbled
- 1/2 tsp. freshly ground black pepper
- 2 Tb. (or more) vegetable oil
- 1 c. water
- Marinade and Shrimp:
- 2 Tb. fresh lime juice
- 3 Tb. (or more) vegetable oil
- 3 lbs. uncooked unpeeled large shrimp, or 2 1/2 lbs. uncooked peeled large shrimp, deveined, tails left intact
Hoisin-Glazed Scallops with Spinach and Cilantro

Dry the scallops well with paper towels and season with 1/2 tsp
- For the best results, use "dry" scallops rather than "wet" scallops, which have been soaked in a sodium solution that prevents them from browning well.
- 16 all-natural "dry" sea scallops, (about 1 lb.)
- kosher salt
- 1/8 tsp. cayenne pepper
- 2 Tb. vegetable oil
- 1 Tb. hoisin sauce
- 3 thin scallions, very thinly sliced
- 10 oz. baby spinach, 10 loosely packed cups
- 1 c. coarsely chopped fresh cilanto
- 1/2 tsp. Asian sesame oil

- 1 1/2 lbs. ground beef
- 1 onion, chopped
- 10 3/4 oz. can cream of chicken soup
- 10 oz. can red enchilada sauce
- 4 oz. can diced green chiles
- 2 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3 c. shredded Mexican-blend or Monterey Jack cheese, divided
- 10 8" flour tortillas
Cheesy Spinach Souffle

- 1 (16 oz.) cottage cheese
- 1 1/2 c. shredded Parmesan cheese
- 2 (10 oz.) pkg. frozen chopped spinach, cooked and well-drained
- 2 eggs, separated
- 1/4 c. butter, melted
- 2 Tb. minced onion
- 1 clove garlic, minced
- 2 Tb. flour
- 1/2 tsp. baking powder
- 1/2 tsp. lemon pepper

- 1/2 c.(1 stick) unsalted butter, cut into 1/2" cubes, room temperature
- 1/4 c. natural unsweetened cocoa powder
- 1/2 c. boiling water
- 1 c. all-purpose flour
- 1 c. sugar
- 1/2 tsp. baking soda
- 1/4 tsp. coarse kosher salt
- 1/4 c. buttermilk
- 1 large egg
- 1/2 tsp. vanilla extract
- Ganache:
- 1 c. semisweet chocolate chips
- 3 Tb. heavy whipping cream
- 2 Tb. unsalted butter, cut into 1/2" cubes
- Praline:
- 3/4 c. packed dark brown sugar
- 1/4 c. heavy whipping cream
- 3 Tb. unsalted butter
- 3/4 c. powdered sugar
- 1 tsp. vanilla extract
