Party Chicken Salad

1. Preheat oven to 350 degrees
- The juice from the peaches adds a sweet note to this luncheon favorite. Serve on a bed of baby lettuces tossed with blackberries.
- 1 c. chopped pecans
- 1/2 c. mayonnaise
- 1/4 c. minced sweet onion
- 2 Tb. chopped fresh basil
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 4 c. chopped cooked chicken breast
- 4 small fresh, firm, ripe peaches, peeled and diced
- Garnishes: fresh basil sprigs
- fresh blackberries
- baby lettuces
Ricotta Gnocchi and Spinach Bake

1. Fill a large Dutch oven with salted water and bring to a boil
- 2 Tb. butter
- 1 large onion, halved and thinly sliced
- 1 1/2 c. + 1 Tb. flour
- 2 c. half and half
- 1/2 tsp. ground nutmeg
- salt and pepper
- 5 oz. baby spinach
- 1 (15 oz.) ricotta cheese
- 3 large eggs
- 1 c. grated parmesan cheese
Slow Cooker Farmer's Market Green Beans

Combine green beans with oil, onion, bacon, water and salt and pepper
- 2 lbs. green beans, trimmed
- 2 Tb. oil
- 1 onion, diced
- 6 slices bacon, chopped
- 3/4 c. water
- Salt and pepper to taste
Roasted Red Potatoes

Place potatoes in a 13x9 baking dish
- 16 medium unpeeled red potatoes, scrubbed, quartered
- 2 Tb. vegetable oil
- 3/4 tsp. garlic powder
- 3/4 tsp. onion powder
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper
- 1/8 tsp. paprika
Cheesy Scalloped Potatoes

1. Position a rack in the top half of the oven and preheat to 375 degrees
- 2 c. milk
- 3 cloves garlic, smashed and peeled
- salt
- 3 lbs. baking potatoes, peeled and sliced 1/4" thick
- 3 oz. gruyere cheese, coarsely grated (about 3/4 c.)
- 1 pinch cayenne pepper
- black pepper
- 1 c. heavy cream
Fried Baby Pickles

To a large, deep, straight-sided skillet, add 1 1/2 to 2" peanut oil
- Spicy Dipping Sauce:
- peanut oil for frying
- 1 c. prepared fish-fry breading mix
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/4 tsp. ground black pepper
- 1/4 tsp. ground cayenne pepper
- 1 (12 oz.) jar baby dill pickles, drained
- 1/2 c. buttermilk
- 1/2 c. mayonnaise
- 1/4 c. sour cream
- 1/4 c. buttermilk
- 2 1/2 Tb. minced green onion
- 1 tsp. minced garlic
- 1 tsp. hot pepper sauce
- 1 tsp. salt
- 1 tsp. lemon juice
- 1/8 tsp. paprika
- Garnish: chopped green onion
Grilled Shrimp and Cuban Corn

Preheat the grill to medium-high
- 8 ears corn, husked
- 1/2 c. olive oil
- salt and pepper
- 3 cloves garlic, finely chopped
- 1 Tb. paprika
- 1/4 tsp. cayenne pepper, plus more for sprinkling
- 2 lbs. large shrimp, peeled and deveined
- 1/4 c. mayonnaise
- 1 Tb. grated parmesan cheese
- 2 limes, cut into wedges
Jailhouse Potato-Cinnamon Rolls

To make the rolls: Fill a large saucepan 3/4 full with water and set on high heat to boil
- Cinnamon Rolls:
- 2 medium russet potatoes
- 1 oz. active dry yeast, (4 packets)
- 3/4 c. + 1 tsp. sugar
- 1 c. (2 sticks) unsalted butter, melted
- 3 large eggs
- 2 tsp. salt
- 9 c. flour
- Filling:
- 4 c. pecans
- 4 c. brown sugar, packed
- 2 Tb. cinnamon
- 1 c. (2 sticks) unsalted butter, melted
- Icing:
- 2 1/2 c. powdered sugar
- 1/4 c. milk
- 1/2 tsp. vanilla extract
Cheesy Spanish Rice

Mix together all ingredients, and place in a greased 9x13 baking dish; cover with foil
- 2 c. regular long grain rice
- 2 c. sour cream
- 1 c. shredded cheddar cheese
- 1 can Rotel tomatoes
- 1 (4 oz.) can chopped green chilies
- 1 c. water
- 1 Tb. chicken bouillon granules
- 1 stick butter
Chocolate Butter Cookies with Glaze

Melt 4 Tb. butter in medium saucepan over medium heat
- Bittersweet Chocolate Glaze:
- 2 1/2 sticks unsalted butter, room temperature
- 1/2 c. cocoa powder, (Dutch process)
- 1 tsp. expresso powder, (or instant coffee)
- 1 c. sugar
- 1/4 tsp. salt
- 2 large egg yolks
- 1 Tb. vanilla
- 2 1/4 c. all-purpose flour
- 4 oz. bittersweet chocolate
- 4 Tb. unsalted butter
- 2 Tb. corn syrup
- 1 tsp. vanilla
