Snack: Ranch Sausage Stars

Brown sausage and drain off any grease, set aside
- 1 - Package Original Hidden Valley Ranch Dressing Mix (prepared according to package directions)
- 1 - 10 oz package Jimmy Dean breakfast sausage, browned & drained
- 1 - 8 oz package Mexican 4 Cheese blend
- 1 - 4 oz can of diced Green Chilies
- 1 - 12 oz package Wonton wrappers or (Egg rolls wrappers cut into 4ths)
Garlic Knots

Sprinkle the yeast on top of the warm water and allow it to sit for 5 minutes
- Dough
- 3/4 cup warm water (105°F - 115°F)
- 1 package of active yeast
- 1 3/4 cups all-purpose flour
- 1 Tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- Garlic-Butter Drizzle
- 5 Tbsp butter or margarine
- 4 cloves garlic, minced
- 1/4 cup parsley, finely chopped
- 1 tsp salt
Chipotle Rubbed Steak Tacos Mole with Chipotle Cream and Guacamole

- 2 ancho chiles, seeded
- 2 pasilla chiles, seeded
- 1 cup strong hot coffee
- 3 tablespoons tomato paste
- 1 (14-ounce) can chicken broth
- 1 tablespoon olive oil
- 1 chopped onion
- 4 garlic cloves, chopped
- 2 tablespoons golden raisins
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2 tablespoons peanut butter
- 3 tablespoons chipotle hot sauce (recommended: Tabasco)
- 1 1/4 cups water, divided
- 2 ounces dark chocolate, chopped
- 2 tablespoons fresh lime juice
- 2 avocados, halved, pitted and peeled
- 1/2 red onion, finely diced
- 2 jalapeno peppers, seeded and finely diced
- 1 lime, zested and juiced
- 2 tablespoons freshly chopped cilantro leaves
- 1/2 cup sour cream
- 1 tablespoon chipotle hot sauce (recommended: Tabasco)
- 4 pounds flat iron steak, room temperature just prior to cooking
- 4 tablespoons chipotle powder
- Salt and freshly ground black pepper
- 8 flour tortillas

- 5 Teaspoons Butter
- 1 cup Chopped onion
- 1 cup Chopped carrots
- 2/3 cup Chopped scallions
- 3 Teaspoons Sesame seeds
- 5 Eggs (Beat)
- 5 Teaspoons Soy sauce
- Salt
- Pepper
- I like to add Shrimp, or sometimes Chicken to this dish. Makes it taste much better.
