- 1 large ham hock, ham shank, or ham bone
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1/2 teaspoon freshly ground black pepper
- 1 pound smoked sausage, hot sausage, andouille, bacon, ham, or other smoked pork
- 1/4 teaspoon cayenne
- 1 large yellow onion, chopped
- 2 bay leaves
- 1 large green bell pepper, chopped
- 1 pound dried black-eyed peas, rinsed and picked over
- 1 or 2 jalapeno peppers, finely chopped (optional)
- 2 quarts ham stock, or chicken stock, or low-sodium chicken broth, or water
- 2 tablespoons tablespoons garlic, minced
- 1/2 cup fresh flat-leaf parsley chopped

- Rosted Pork Belly:
- 2 1/2 lb pork belly (choose a meaty piece)
- 1 Tbsp kosher salt
- 2 tsp thyme
- 1 tsp sage
- olive oil
- small wire rack
- large roasting rack or cookie sheet
- heavy duty foil
- Hoisin Mushroom Sauce:
- 1 onion, chopped
- 8 ounces fresh shiitake mushrooms, sliced
- 2 Tbsp Hoisin Sauce
- 2 Tbsp rice wine (or sherry)
- 1 cup chicken stock
- 1/2 tsp salt
- 1 tsp cornstarch
- olive oil
Pork Belly: Slow Cooker Braised Apples & Cabbage

- 22 ounces hard apple cider
- 1/4 cup salt
- 2 tablespoons sugar

- 4 cups chicken or pork stock
- 1/4 cup American apple brandy (for example, Laird's)

1. Preheat oven to 350 degrees F
- 1 pound skinless salmon fillet, cut into 4 portions
- 1 lemon
- 1 tablespoon snipped fresh dillweed
- 1 tablespoon snipped fresh tarragon or lemon thyme
- 1 tablespoon snipped fresh Italian (flat-leaf) parsley or bias-sliced chives
