- 4-5-pounds boneless pork shoulder, cut into 5-inch chunks, trimmed of excess fat
- 1 tablespoon coarse sea salt
- 2 tablespoons canola or neutral vegetable oil
- water
- 1 cinnamon stick
- 1 teaspoon chile powder
- 1 teaspoon ancho chile powder
- 2 bay leaves
- 1/4 teaspoon ground cumin
- 3 cloves of garlic, peeled and thinly-sliced
Refried Beans

We use bacon fat in this recipe, though you can easily use olive oil or lard
- 2 1/2 cups of dry pinto beans (about 1 lb or 450gm)
- 3 quarts of water
- 1/2 cup chopped onion (optional)
- 2 Tbsp (or more to taste) pork lard, bacon fat, or olive oil (for vegetarian option)
- 1/4 cup water
- Salt to taste
- Cheddar cheese (optional)
Dip: Honey Mustard Dip

- 1 1 1 cup all-purpose flour
- 5 5 5 large eggs
- 1 1 1 cup buttermilk
- 1 1/2 1 1/2 1/2 teaspoons salt
- 1 1/2 1 1/2 1/2 teaspoons ground black pepper
- Breading
- 20 20 20 saltine crackers
- 4 4 4 cups kettle cooked potato chips
- Filling
- 1 1 1 can SPAM (Chopped)
- Handful Handful sliced pickles
- 2 2 2 pounds cream cheese
- All-purpose flour for hands
- Vegetable oil, for frying
Chick-Fil-A Bites

Directions: Whisk together egg, milk and pickle juice, and pour into a large Ziploc bag or bowl
- 2 large chicken breasts, cut into bite-sized pieces and seasoned with salt & pepper
- 3/4 cup milk
- 1/4 cup dill pickle juice
- 1 egg
- 1 1/4 cups flour
- 2 Tablespoons powdered sugar
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/2 cup peanut oil, divided (or canola or vegetable oil)
Taco Pie

1. Preheat oven to 350 degrees
- 1/4 cup butter
- 2/3 cup milk
- 1 package taco seasoning mix
- 2 1/2 cups mashed potato flakes (you could also use left over mashed potatoes and omit the butter and milk)
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/2 cup salsa
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1 cup sharp cheddar cheese, shredded
- Sour cream, optional
Mayan Couscous

Combine the couscous, cumin, and salt in a large bowl
- 1 cup couscous
- 1/2 teaspoon ground cumin
- 1 teaspoon salt, or to taste
- 1 1/4 cups boiling water
- 1 clove unpeeled garlic
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup canned whole kernel corn, drained
- 1/2 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno pepper, minced
- 3 tablespoons olive oil
- 3 tablespoons fresh lime juice, or to taste

- 6 new red potatoes, scrubbed, quartered

- 1 clove garlic, chopped
- 1 (9-ounce) package frozen peas
