Garlic Knots

Sprinkle the yeast on top of the warm water and allow it to sit for 5 minutes
- Dough
- 3/4 cup warm water (105°F - 115°F)
- 1 package of active yeast
- 1 3/4 cups all-purpose flour
- 1 Tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- Garlic-Butter Drizzle
- 5 Tbsp butter or margarine
- 4 cloves garlic, minced
- 1/4 cup parsley, finely chopped
- 1 tsp salt
Sauce: Comeback Dipping Sauce

Mix all ingredients well and store in refrigerator overnight
- 1 cup mayonnaise
- 1/4 cup ketchup
- 1/4 cup chili sauce (DO NOT substitute Thai Chili Sauce)
- 1 heaping teaspoon Dijon mustard
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 teaspoons Worcestershire sauce
- 1 teaspoon ground black pepper
- 1/4 teaspoon Tabasco sauce
- 1/4 cup light olive oil
- juice of one lemon
Binagoongan - Pork Belly

1. Boil the pork in water with salt, pepper and pork cubes
- 1 kg pork belly, cut into 1 inch strip.
- 1 head garlic, minced
- 2 large, red onions, diced
- 4 medium tomatoes, diced
- 2 eggplants, cut lengthwise then sliced into 1 cm thick
- 4 jalapeno peppers, seeded and thinly sliced, set aside a few slices for garnish
- 1/2 cup, Barrio Fiesta Sweet shrimp paste
- 1 cup pork broth*
- 1 tbsp granulated sugar
- 1 tbsp vinegar
- 2 pork cubes, crushed, (optional)
- salt and pepper to taste
- 1/4 cup oil + more for deep frying the pork (approximately 4 cups)

Carnitas may seem like a complex Mexican dish to pull off, but really it only takes a little patience to perfect
- For the pork:
- Special equipment: You’ll need cheesecloth and butcher’s twine for this recipe.
- 3 (5-inch) fresh marjoram sprigs
- 2 medium garlic cloves, peeled and smashed
- 1 tablespoon coriander seeds
- 1 bay leaf
- 1 medium white onion, peeled and quartered through the root end
- 2 teaspoons kosher salt
- 3 pounds boneless pork shoulder, cut into 2-inch cubes (do not trim the fat)
- For serving (optional):
- Corn or flour tortillas
- Guacamole
- Sour Cream
- Cheese
- Salsa
- Chopped fresh cilantro leaves
- Lime wedges

- 1 lb. grilled and shredded chicken (I seasoned mine with Tone's Southwest Chipotle seasoning)
- 1 (8 ounce) package cream cheese, softened
- 1 cup mayonaise
- 1 (8 ounce) package shredded Mexican blend cheese
- 1 (4 ounce) can diced green chili peppers
- 1 jalapeno pepper, finely diced (use more if you like more heat)

Adjust the oven rack to upper-middle position and heat oven to 450 degrees
- 4 (6-inch) sub rolls, split in half lengthwise
- 1 1/4 cup cornflakes, crushed
- 1/2 small onion, minced
- 1/2 cup milk
- 6 tablespoons ketchup, separated ????
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced fresh thyme
- 1/2 teaspoon garlic powder
- 1 large egg, lightly beaten
- Salt and pepper
- 1 1/2 pounds ground beef
- 2 cups shredded cheddar cheese

In a 2 quart casserole dish, combine Cheddar cheese, beans, corn, tomatoes, salsa, Sour Cream and jalapeño pepper
- 2 cups (8 ounces) shredded Wisconsin Sharp Cheddar cheese
- 2 cups canned black beans, drained and mashed
- 1 cup corn kernels
- 1 cup chopped tomatoes
- 1/2 cup salsa
- 1/2 cup low fat sour cream
- 1/2 cup diced jalapeño pepper, seeded (optional)
- 1/2 cup chopped green onions
- 1/2 cup sliced black olives
- 1 cup (4 ounces) shredded Wisconsin Monterey Jack cheese

- 1 cup apple juice in spray bottle
