Salmon (Grilled)

In a small bowl, combine the oil, soy sauce, mustard and garlic
- 2 tablespoons olive oil
- 1 tablespoon reduced-sodium soy sauce
- 2 teaspoons Dijon mustard
- 1/4 teaspoon dried minced garlic
- 2 salmon fillets (5 ounces each)

Preheat oven to 350°F degrees
- 1 pound bacon, cooked
- 1 cup mayonnaise
- 1 cup sour cream
- 8 ounces cream cheese, softened
- 1 1/2 cups cheddar cheese
- 1 tomato, seeded and chopped
- 1/4 cup chopped green onions
- Additional green onions, cooked bacon, tomato, and lettuce for garnish, if desired
Mongolian Beef 2

1 Make the sauce by heating 2 tsp of vegetable oil in a medium saucepan over med/low heat
- 2 teaspoons vegetable oil
- 1/2 teaspoon ginger, minced
- 1 tablespoon garlic, chopped
- 1/2 cup soy sauce
- 1/2 cup water
- 3/4 cup dark brown sugar
- vegetable oil, for frying (about 1 cup)
- 1 lb flank steak
- 1/4 cup cornstarch
- 2 large green onions
- Red Pepper Flakes
- In a large bowl (I prefer glass) combine steak, an additional 1/4 cup of low-sodium soy, and 2 T Hoisin sauce with the corn starch and mix well with fingers. Let that marinade (not in frig) for about 30 mins

This chunky, colorful version makes a big batch, but it will be gone before you know it!
- 1 can (15 ounces) black beans, rinsed and drained
- 2 cups fresh or frozen corn, thawed
- 5 plum tomatoes, chopped
- 1 large sweet red pepper, chopped
- 1 small green pepper, chopped
- 1 can (4 ounces) chopped green chilies
- 1/4 cup chopped red onion
- 1/4 cup minced fresh cilantro
- 2 tablespoons lime juice
- 2 garlic cloves, minced
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
Sausage Rice Casserole

Easy casserole that taste good and made with Sausage and Rice
- 1 1/2 cups Chopped Onions
- 6 tb Butter
- 1 cup Instant Rice
- 1 can Cream of Mushroom Soup
- 1 can Beef Consomme
- 1 lb Sausage, cooked
- 1 can Sliced Water Chestnuts

Grate cheddar cheese Combine cheeses (if too stiff add a little cream or milk)
- 1 8 oz. Mild Cheddar Cheese
- 2 8 oz. Cream Cheese
- 2 teaspoons Grated Onion (I used dried onion flakes and just soaked them in water about fifteen minutes)
- 2 teaspoons Worcestershire Sauce
- Crushed Pecans (Optional)

- For the Brown Sugar-Cayenne Candied Bacon:
- 1/2 cup brown sugar
- 1/4 tsp cayenne (or more to taste)
- 8 oz bacon (I used Applegate Farms Uncured Sunday Bacon)
- For the Biscuits:
- 2 cups White Lily brand Unbleached Self Rising Flour
- 6 tbsp cold butter, cut into pieces
- 2 tbsp cold shortening
- 3/4 – 1 cup buttermilk
- 2 tbsp butter, melted
- For the Sea Salt Butter:
- 1/2 stick unsalted butter, room temperature
- 2 large pinches sea salt

- 3 oz. uncooked chorizo (spicy Mexican sausage)
- 6 oz. ground beef
- 1 medium onion, chopped
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1 tbsp. minced garlic
- 1 cup baby spinach
- 4 slices whole wheat bread, cubed
- 4 eggs
- 2/3 cup milk
- 1/2 tsp. ground mustard
- 1/2 tsp. salt
- Freshly ground black pepper, to taste
- 1/2 cup grated swiss cheese
- 1/2 cup grated extra sharp cheddar cheese
- 1/2 cup grated jalapeño cheddar cheese
