Creole Black-Eyes and Rice

Black Eye Pea Casserole / Soup and Rice
- 1 (16-oz) package dried black-eyed peas
- 1/2 pound salt pork, bacon, or ham
- 3 cups chopped onion
- 1 bunch green onions, chopped
- 1 cup chopped green pepper
- 1 to 1 -1/2 teaspoons salt
- 1/4 tsp. dried whole thyme
- 1 tbls Worcestershire sauce
- 1/4 tsp. dried whole oregano
- 1 cup chop fresh parsley
- 2 cloves garlic, pressed
- 1 teaspoon red pepper
- 3 dashes of hot sauce
- 1 (8oz) can tomato sauce
- 1 teaspoon pepper
- 2 pounds smoked sausage (cut into 1-inch pieces)
- Hot cooked rice
- Green onion fan (optional)
Dip: White Pizza Dip

Preheat oven to 400 degrees F
- 1 pint grape tomatoes, tomatoes cut in half
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 (12 ounces) blocks cream cheese, softened
- 8 ounces mozzarella cheese, freshly grated
- 8 ounces provolone cheese, freshly grated
- 1/4 cup finely grated parmesan cheese + more for garnish
- 4 garlic cloves, minced or pressed
- 1/4 cup freshly chopped basil leaves
- 2 tablespoons freshly chopped thyme leaves
- 1/2 tablespoon freshly chopped oregano leaves
- crackers, bread or chips for serving
Cajun Fire Crackers

Cajun fire crackers are an appetizer you can make ahead of your party and it will keep really well
- 1 box saltine crackers (4 sleeves)
- 1 1/3 cup canola oil
- 1 tablespoon red pepper flakes
- 1 tablespoon cayenne pepper
- 1 packet dry ranch dressing mix
- 1 Tupperware Season-Serve® Container, Big Pickle Jar or 2.5 gallon ziploc bag
Neely's Dry Rub

- 2 tablespoons ancho chili powder
- 2 tablespoons smoked paprika
- 2 tablespoons dried oregano
- 1 tablespoon chipotle chili powder
- 1 tablespoon garlic powder
- 1 tablespoon ground mustard

- 2 tablespoons kosher salt
- 1/2 teaspoon freshly ground black pepper

- 1/2 cup vegetable oil
- 2 large eggs
- confectioners' sugar or granulated sugar, for rolling
Slow Cooker Teriyaki Port Tenderloin

Heat the olive oil in a skillet over medium-high heat
- 2 tablespoons olive oil
- 2 pounds pork tenderloin
- 1/2 cup teriyaki sauce
- 1 cup chicken broth
- 1/4 cup brown sugar
- 4 cloves garlic, chopped
- 3 fresh red chile pepper, finely chopped
- 1/2 large onion, sliced
- 1/4 teaspoon black pepper

Unroll the crescent roll dough and smoosh together all the seams
- 1 tube of crescent roll dough (Reduced fat works just fine for this and you’ll never know the difference!)
- 2 ounces cream cheese or (1/3 less fat cream cheese works here!)
- 5 -ish bacon slices, fried and chopped
- Bunch of green onions, chopped (optional – I left these out, but they’d be good)
- handful or two of cheddar cheese
- sprinkling of garlic salt

- Remove from heat and add:
- 2 cups of sugar
- 1 stick of butter
- 1/2 cup of milk
- 6 tablespoons of cocoa
- 1 tablespoon of vanilla
- 1/2 cup of peanut butter
- 3 cups of oatmeal

- 1/4 cup minced onion

- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1 medium sized bag of nacho cheese Doritos, crushed
