Chili Rellenos Casserole

My all time favorite, but then I am a chili relleno fan
- 8 ounces Monterey jack cheese
- 3 cans 7oz each whole green chilies
- 10 each eggls
- 1/2 cup flour
- 1 teaspoon baking powder
- 2 cups small curd cottage cheese
- 1 large avocado, sliced
- bottled green or red taco sauce
Caramel Apple Salad Low Fat

Cut apples, place in bowl
- 4 apples, cut into cubes, skin on
- 1 pckg fat free, sugar free butterscotch pudding mix
- 1 20oz can of crushed pineapple undrained
- 1 small container of Lite or fat free cool whip
Buttermilk Cinnamon Bread

IN a large mixing bowl, combine flour, baking soda and salt
- 4 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup vegetable oil
- 2 1/2 cups sugar divided
- 2 cups buttermilk
- 2 each eggs
- 1 tablespoon cinnamon
- 2 tablespoons finely chopped walnuts
Pork Rib Dinner

ABOUT 2 1/2 hours before serving; on waxed paper, coat pork loin ribs with flour
- 4 pounds pork loin country style ribs, cut to serve pieces
- 1/3 cup flour
- 2 tablespoons oil
- 1 1/2 cups apple juice
- 1 tablespoon salt
- 1/2 tablespoon pepper
- 2 pounds small red peppers
- 1 bag carrots 16oz, cut into 2" pieces
- 1 pound small whole onions
- 1 head cabbage, shredded
Spinach Noodles with Sauted Veggies

Cook noodles according to package direcions, then drain
- 6 oz spinach noodles uncooked
- Pam
- 1 med onion chopped
- 1 clove garlic crushed
- 1 med yellow squash thinly sliced
- 1 med zucchini thinly sliced
- 1 c fresh corn
- 1 T chopped parsley
- 3/4 t dried basil
- 3/4 t dried oregano
- 1/4 t salt
- 1/4 t black pepper
- 2 medium tomatoes peeled and chopped
Chive Crab Cakes (skinny)

In a large bowl, lightly beat the egg whites and egg
- 4 egg whites
- 1 egg
- 6 T minced chives
- 3 T flour
- 1 to 2 t hot pepper sauce
- 1 t baking powder
- 1/2 t salt
- 1/4 t pepper
- 4 cans (6oz ea)crabmeat, drained, flaked and carilage removed
- 2 c panko bread crumbs
- 2 T canola oil

- 2 T dijon mustard
- 1 t. chopped chipotle pepper in adobe
- sauce
- 1/2 t. salt

- 2 tablespoons butter or margarine
- 1 pound skinless boneless chicken breast, cut into 1" cubes
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 tablespoon paprika
- 1/2 cup milk
- 1 package Pasta Roni Fettuccine Alfredo
- 1 each green bell pepper, cut into strips
- 1/2 cup sour cream
Diet Coke Sloppy Joes Low Fat

- 1 tbsp worcestershire sauce
- 2 tbsp white vinegar
- 2 tsp dry mustard
