Zucchini Cheese Casserole

Ingredients
- 1 1/2 pounds zucchini
- 1 small onion, chopped
- 2 tablespoons butter
- 1 can diced green chiles 4 oz
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups Monterey jack cheese, grated
- 1 each egg
- 2 tablespoons minced parsley
- 1/2 cup grated Parmesan cheese
- 1 cup cottage cheese

Preparation
Step 1
DICE zucchini. Combine with onion and butter in skillet. Saute until tender. Mix in drained chiles, flour, salt, and pepper. Turn into 9 inch pie plate or shallow 1 1/2 quart baking dish.
SPRINKLE with jack cheese. Mix egg with cottage cheese and parsley. Spoon over top. Sprinkle with Parmesan cheese. Bake uncovered in 400 oven for 20 minutes or until hot in the center.
