Pork with Savory Apple Stuffing

Ingredients
- 1 pkg (6oz) corn bread stuffing mix
- 1 can chicken broth
- 1 small apple, peeled, cored, chopped
- 1/4 c chopped celery
- 1 1/3 c french's French Fried onions, divided
- 4 boneless pork chops, 3/4 in thick(about 1 lb)
- 1/2 c peach apricot sweet and sour sauce
- 1 T honey dijon mustard

Preparation
Step 1
Preheat oven to 375. Combine stuffing mix, broth, apple, celery and 2/3 c onions in large bowl. Spoon into bottom of greased shallow 2 qt baking dish. Arrange chops on top of stuffing.
Combine sweet and sour sauce with mustard in small bowl. Pour over pork. Bake 40 min or until pork is no longer pink.
Sprinkle with remaining onions. Bake 5 min longer or until onions are golden.
