Pizza Pinwheels

Heat oven to 350. Spray cookie sheet with Pam
- 1 can (8oz) crescent dinner rolls
- 2 T grated Parmesan cheese
- 1/3 c finely chopped pepperoni
- 2 T finely chopped green bell pepper
- 1/2 c shredded Italian cheese blend
- 1/2 c Pizza sauce
1 Minute breakfast or snack (skinny)

- 1/4 c quick cook oats
- 1 egg (sub 1/4 egg beaters for less calories)
- small handful of blueberries
- 1 T mile for added moistness
Southwestern Enchiladas

Preheat oven to 350. Spread half enchilada sauce in 9 inch glass baking dish; set aside
- 1 can enchilada sauce (10oz)
- 2 pkg (6oz ea)refrigerated fully cooked seasoned beef steak strips
- 4 tortillas
- 1/2 c canned condensed nacho cheese soup or 1/2 c chili flavored cheese spread
- 1 1/2 c shredded mexican cheese blend
Potato Soup Peasant Style

IN a large saucepan over medium heat, melt butter
- 3 tablespoons butter
- 2 tablespoons flour
- 3 medium potato, peeled and cubed
- 1 teaspoon Hungarian paprika
- 1 each carrot, chopped
- 1/2 each onion, minced
- 1/2 small tomato, minced
- 1/2 small green pepper, minced
- salt to taste
- 2 quarts water
Fluffy Key Lime Pie

For true Key Lime flavor, use Key Limes in place of regular limes for the lime juice
- 1 Pillsbury refrigerated pie crust, softened as directed on box
- 1 enevelope unflavored gelatin
- 1 c sugar
- 1/2 c fresh lime juice
- 1/4 c water
- 4 pasteurized eggs, separated
- 1 t grated lime peel
- 2 drops green food coloring
- 1 c whipping cream
Lemon Bar Muddy Buddies

Avocado Salsa

In a large bowl, combine corn, olives, red pepper and onion
- 1-2/3 cups frozen corn, thawed
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 1 medium sweet red pepper, chopped
- 1 small onion, chopped
- 5 garlic cloves, minced
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 3 tablespoons cider vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 medium ripe avocado, peeled
- Tortilla chips
Baked Parmesan Fries

- 3 c all purpose flour
- 2 cans (21 oz ea) cherry pie filling
- Glaze
- 1 c powdered sugar
- 1/2 t vanilla
- 1/2 t almond extract
- 2-3 T milk
