Hearty Penne Beef

- 1 3/4 c uncooked penne pasta
- 1 lb ground beef
- 1 t minced garlic
- 1 can (15oz) tomato puree
- 1 can beef broth

- 1 t worcestershire sauce
- 1/4 t salt
- 1/4 t pepper
- 2 c chopped fresh spinach
- 2 c (8oz) shredded part skim mozzarella cheese
Ambrosia Waldorf Salad

COMBINE cranberries and sugar
- 2 cups fresh or frozen cranberry halves
- 1/2 cup sugar
- 3 cups miniature marshmallows
- 2 cups diced unpeeled apples
- 1 cup seedless green grape halves
- 3/4 cup chopped pecans
- 1 can 20oz pineapple tidbits, drained
- 1 cup whipping cream, whipped
- shredded or flaked coconut
Vienna Chocolate Pie

Heat oven to 400. Make pie crust as directed on box for one crust pie in a 9" glass pie pan
- 1 Pillsbury refrigerated crust, softened as directed on box
- 1 1/2 c sugar
- 3 T all purpose flour
- 3/4 t instant coffee granules or crystals
- 1/4 t ground cinnamon
- dash salt
- 4 eggs
- 1/2 c buttermilk
- 1 1/2 t vanilla
- 1/2 c butter or margarine, softened
- 2 oz unsweetened baking chocolate, melted
- 1/4 c slivered almonds
- *to substitute for buttermilk, use 1t vinegar or lemon juice plus milk to make 1/2 cup.
Stuffed Bean Burgers (skinny)

Wash quinoa thoroughly. Combine with vegetable broth in a small pot and bring to a boil
- 1/3 c quinoa
- 2/3 c vegetable stock
- 1 c dry whole wheat pasta (penne, rigatoni, macaroni)
- 14/5 oz can black beans drained and rinsed
- 2 t soy sauce
- 2 t worcestershire sauce
- 2 T minced onion
- 1 t minced garlic
- 3 T hummus
- 2 t lemon juice
- 1 T nutritional yeast
- 4 whole wheat buns, split
- lettuce, pickles, tomatoes and any other trimmings of your choice

- 1 large onion, finely chopped
- 4 oz cream cheese
- 3 cloves garlic, minced
