Bruschetta Chicken

Place flour and eggs in separate shallow bowls
- 1/2 c flour
- 1/2 c egg substitute
- 4 boneless skinless chicken breast halves (4oz ea)
- 1/4 c grated Parmesan
- 1/4 c dry bread crumbs
- 1 T butter melted
- 2 large tomatoes, seeded and chopped
- 3 T minced fresh basil
- 2 garlic cloves, minced
- 1 T olive oil
- 1/2 t salt
- 1/4 t pepper

Pan Fried Chicken with Roasted Apples

Heat the oven to 425. Toss the apples with 1 t of olive oil, honey, and rosemary on a rimmed baking sheet
- 2 med pink lady or gala apples (1 lb) cut into 12 wedges

- 1 T honey
- 1 T fresh rosemary leaves coarsely chopped or 1/2 t dried thyme

- 1 med red or white diced onion

- 2 c quartered crimini mushrooms
- 1/2 c dry white wine
- 1 c chicken stock
- 1 c sour cream******
- 1 T flour
- 8 oz pkg cream cheese
- 1 c crushed croutons
Meatball Soup

In a med bowl combine egg white, bread crumbs, onion, garlic powder, and pepper
- 1 beaten egg white
- 1/2 c soft bread crumbs
- 1/4 c finely chopped onion
- 1/8 t garlic powder
- 1/8 t black pepper
- 8 oz lean ground beef
- nonstick cooking spray
- 2 14oz cans reduced sodium beef broth
- 1 14 1/2oz can diced tomatoes with Italian herbs, undrained
- 1 15oz can garbanzo beans rinsed and drained
- 1 c sliced fresh mushrooms
- 1/2 c water
- 1/2 c dried small bow tie pasta
- 3 c torn fresh spinach
Cinnamon Apple Crostata

Heat oven to 450. Remove pie crust from pouch; place crust flat on ungreased cookie sheet
- 1 Pillsbury refrigerated pie crust, softened as directed on box
- 1/2 c sugar
- 4 t cornstarch
- 2 t cinnamon
- 4 c thinly sliced, peeled apples (about 4 med apples)

- 2 T chopped pecans or walnuts

- 1/4 c dry bread crumbs
- 1/2 t dried parsley flakes
- 1/4 t garlic powder
- 36 uncooked small cheese ravioli
- nonstick cooking spray
- 1 c water
- 2 T sugar
- 2 T rice wine vinegar
- 1 T cornstarch
- 1 T reduced sodium soy sauce
- 1 t grated fresh ginger
- 1/2 t sesame oil
- 1/3 c minced cilantro
Butterscotch Bars

Preheat oven to 350. Combine sugar and butter in a large bowl
