Italian Creme Bundt Cake

Pre-heat oven to 350 degrees
- 2 c all purpose flour
- 2 c sugar
- 1 stick butter
- 1/2 c shredded coconuts
- 1 c finely chopped walnuts
- 5 egg whites [beat for stiff peaks]
- 5 egg yolks
- 1 c buttermilk
- 1 1/2 tsp vanilla
- 1 tsp baking soda
- 1 Tbsp baking powder [optional]
- CAKE ICING
- 8 oz cream cheese
- 1/2 c whipping cream
- 1/2 c chopped nuts
- 4 c powdered sugar
- 1/2 ccoconut, shredded
Crabcakes 2

1. Preheat oven to 400. Spray cookie sheet with Pam
- 1/3 pound imitation crab, flaked
- 1 tablespoon dijon mustard
- 1 each egg white
- 1 1/2 teaspoons lemon juice
- 1/2 teaspoon worcestershire sauce
- pinch of cayenne pepper
- 1/8 teaspoon salt
- 2 dashes tabasco sauce
- 1/2 cup soft bread crumbs
Oven Pork Barbecue

Directions 1.Place the chipotle pepper in a small bowl
- 1 chipotle chile pepper (wear plastic gloves when handling)
- 2 tablespoons olive oil
- 3/4 pound pork tenderloin
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon ground red pepper
- 2/3 cup diced onion
- 1 tablespoon minced garlic
- 1/2 cup barbecue sauce
- ketchup
- 1/4 cup water
- 1 teaspoon maple syrup
- 4 sandwich buns, split and warmed
Cheese Fondue

These are the ingredients from one of the sauces from Simply Fondue Restaurant
- Block of Fontina cheese, usually sold in a wedge, grated
- 1 T marinara sauce
- 1/4 c pesto (I used store bought)
- 1 t fresh chopped garlic
- 1/2-1 c white wine (chardonnay or pinot grigio is good)
- couple T of flour stirred in with the grated cheese
Chocolate Brickle

Grease well a 13x9 baking pan and set aside
- 1 c butter (2 sticks)
- 1 1/2 c packed light brown sugar
- 1 1/2 c mixed cocktail nuts
- 1 t vanilla extract
- 12 oz pkg semisweet chocolate chips
Winter Soup

Combine all ingredients except tomatoes, sausage, butter, and parmesan cheese
- 1 c dried lentils, washed
- 2 qts water
- 1/4 c tomato sauce
- 2 t salt
- 1 t oregano
- 1/2-1 t basil
- 1/2 t thyme
- fresh ground pepper
- 1 clove garlic, minced
- 2 stalks celery, sliced
- 1 onion, sliced
- 3 carrots, sliced
- 6 mushrooms, sliced
- 1 baking potato, unpeeled and cut into chunks
- 1/3 c fresh parsley
- 2 16 oz cans tomatoes, drained
- 4 oz pork sausage, browned and well drained
- 1 T butter
- lots of fresh grated parmesan cheese

This is killer spread over a steak or chicken
- 1/2 c butter softened
- 1 clove garlic, minced
- 1 t dried parsley flakes
- 1/2 t dried basil
- 1/2 t dried thyme
Crab Dip

DISSOLVE gelatin in the water
- 1 pound crab meat
- 1 cup mayonnaise
- 1/4 teaspoon garlic salt
- 1 tablespoon vinegar
- 1 cup chopped celery
- 1 small onion, chopped
- 1 small jar pimentos
- 1/2 cup water
- 1 envelope Knox gelatin
Caprese Burger

1. Whisk the balsamic vinegar, oil, salt, and pepper in a small bowl
- 1 tablespoon balsamic vinegar
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
- 4 thick slices tomato
- 1 1/3 pounds lean ground beef
- 1 tablespoon tomato paste
- 1/4 cup chopped fresh basil
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 4 ounces fresh mozzarella cheese, sliced
- 4 hamburger buns, split
Loaded Quinoa Veggie Burger (skinny)

Rinse quinoa well. In a small pot, bring 3/4 c water to a boil
- 1/2 c uncooked quinoa
- 1 carrot, diced
- 4 scallions, sliced
- 2 cloves garlic
- 15 oz can black beans, drained and rinsed
- 1/4 c Italian seasoned dried breadcrumbs
- 1 large slightly beaten
- 1 T cumin
- 3/4 t salt
- 1/2 t pepper
- 2 T olive oil
