Creamy Chicken Broccoli Casserole

- 3 c broccoli florets
- 1 T olive oil
- 1 T butter
- 1 lb cooked and cubed chicken breast
- salt and pepper to taste
- generous amt garlic powder
- 1 med red or white diced onion
- 3 garlic cloves minced
- 2 c quartered crimini mushrooms
- 1/2 c dry white wine
- 1 c chicken stock
- 1 c sour cream******
- 1 T flour
- 8 oz pkg cream cheese
- 1 c crushed croutons

Step 1
Preheat oven to 375. Steam the broccoli florets until just under tender and place them in the bottom of a greased casserole dish.
Heat the olive oil and butter in a heavy bottomed skillet over med high heat, then add the chicken, sprinkle generously with salt, pepper, and garlic powder,then cook until done.
Using a strainer, remove the cooked chicken from the pan and arrange it in with the broccoli.
Leave the liquid in the pan and lower the heat a little, add the diced onion, salt and pepper and cook for about 3 min or until beginning to turn brown.
Add the garlic and continue cooking for about 2 more min.
Increase the heat to med high and add the mushrooms and cook until they have released most of their liquid, about 5-6 min.
Increase heat to high, then pour in the wine, and boil until the liquid reduces by about half, about 3 min.
Using a fork, whisk the flour, cream cheese, sour cream and stock together until blended, then stir into the sauce and simmer until it begins to thicken,about 3-5 min.
Pour the sauce over the chicken and broccoli. bake in the oven about 25-30 min.
Sprinkle the crouton bits over the top about 10 min before done.
