Cock-A-Leekie Soup

Saute vegetables in butter until soft
- 1 1/2 bunches leeks, diced
- 2 onions, diced
- 3 stalks celery, diced
- 1/4 lb butter
- 4 c chicken stock
- 2 lbs potatoes, diced
- half and half
- salt and pepper to taste
Asian Sesame Chicken

Try this instead of take out! Serve with steamed oriental vegetables
- 4 boneless, skinless chicken breasts
- 1/3 cup sesame seed
- 1/3 cup plain dried bread crumbs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 large egg
- 1 Tbsp teriyaki sauce
- 4 tsp vegetable oil, divided
Camp Burger

In a food processor puree onion, carrots and garlic
- 3 lbs ground beef
- 1/2 lb breakfast sausage
- 1 c carrots
- 1/2 onion
- 1 garlic clove
- 1/4 c bbq sauce
- 1 c of your favorite shredded cheese
- 2 t salt
- 2 t pepper
- 1 t onion powder
- 1 t garlic powder
Meatball Soup

- 2 pounds ground beef
- 2 medium onions, chopped
- 6 medium potatoes, cubed
- 6 each carrots, cut up
- 1 can tomato soup
- water
- spices to taste
- oil
- 1 each beef bouillon cube
Dijon Green Beans (skinny)

Place beans in large saucepan and cover with water
- 1 1/2 lb fresh green beans, trimmed
- 2 T red wine vinegar
- 2 T olive oil
- 2 t dijon mustard
- 1/2 t salt
- 1/4 t pepper
- 1 c grape tomatoes, halved
- 1/2 small red onion, sliced
- 2 T grated Parmesan cheese

- 1/4 cup frozen chopped onions and peppers

Meditterranean Pasta Soup

REMOVE casings on sausage and crumble into a pan
- 1/4 pound mild Italian sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 1/2 teaspoons dry thyme leaves
- 1/4 teaspoon pepper
- 1/2 cup dry small white beans
- 3 quarts regular strength chicken broth
- 1 teaspoon grated lemon rind
- 2 small carrots, peeled and diced
- 2 stalks celery, diced
- 1 cup dry small shell pasta
- 1 medium tomato, cut into 1/2 inches
- 1 cup lightly packed shredded swiss cheese
Hot Swiss Chicken Sandwiches (skinny)

In a large bowl, combine the mayo, salt and lemon juice
- 1/4 c reduced fat mayonnaise
- 1/4 t salt
- 1/4 t lemon juice
- 1 1/2 c diced cooked chicken breast
- 2/3 c chopped celery
- 1/2 c shredded reduced fat swiss cheese
- 4 t butter, softened
- 6 slices Italian bread about 3/4 in thick
- 6 slices tomato
- 3/4 c shredded lettuce
Sour Cream Substitue

- 1 c cottage cheese
- 6 t low fat milk
