Low Country Kabobs

Place the potatoes in a Dutch oven and cover with water
- 12 small red potatoes, quartered
- 3 med ears sweet corn, cut into 1 inch slices
- 1/3 c butter, melted
- 2 T olive oil
- 1 t salt
- 1 t garlic powder
- 1 t seafood seasoning
- 1 lb smoked kielbasa or polish sausage, cut into 1 in slices
- 1 1/2 lbs uncooked med shrimp, peeled and deveined
Black Bean Salad

In a medium serving bowl, mix together the ingredients and chill for 1 hour before serving
- 1 15 oz can Jalapeno black bean with lime juice, rinsed and drained
- 1 15 oz can reduced sodium black beans, rinsed and drained
- 2 tomatoes, finely chopped
- 1 Serrano chile pepper, seeded and chopped
- 1 orange bell pepper, seeded and chopped
- 3-4 green onion, chopped
- 1/4 c pinot grigio white wine vinegar
- 2 T vegetable oil
- 1/2 t salt
Easy Pork Roast

Preheat oven to 275. In a large skillet over med high heat, brown the roast on all sides, about 10 min
- 4 lb pork shoulder roast
- 2 16 oz cans cannellini beans
- 1 12oz can of beer
- 1 28 oz can stewed tomatoes, drained
- 2 large onions, coarsely chopped
- 10 shallots, peeled
- 10 cloves garlic peeled
- salt and pepper to taste
- 2 bay leaves
- 3 sprigs fresh rosemary
Italian Sausage Stuffing

In a skillet, cook and crumble sausage in 1 T olive oil until no longer pink
- 1 pkg Mild Italian Sausage ground or decased links
- 1/4 c olive oil, separated
- 2 loaves focassia bread (12 oz ea) cut into 1 in cubes
- 1 T coarse ground pepper
- 1 c Parmesan cheese, shredded
- 1 small green pepper diced
- 1/2 c oil packed sun dried tomatoes, chopped
- 5 large leaves fresh basil chopped
- 2 garlic cloves minced
- 2 eggs
- 1 1/2 c water or white wine
- 1/4 c butter, cubed
Apple Custard Pie

1. Combine water, sugar, butter, cinnamon, and nutmeg in a medium dutch oven; stir well over medium heat
- 1 cup sugar
- 1/4 cup water
- 2 tablespoons butter or margarine
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 5 medium apples, peeled, cored,sliced
- 1 each unbaked pie shell
- 1 each egg, beaten

- 2/3 cup whipping cream
Texas Beans

In a large pot bring beans and water to a boil
- 16 oz package of dried pinto beans
- 2 qts water
- 16 oz can chopped tomatoes undrained
- 4.5 oz can chopped green chilies
- 2 cloves garlic minced
- 1 t cumin
- 8 oz jar taco sauce
- 1 large onion choppped
- 1 t salt
- 1/4 t black pepper
- rice if desired
Berry Berry Streusel Bars

Heat oven to 350. Combine oats, flour, brown sugar and better; mix until crumbly
- 1 1/2 c quaker oats, uncooked
- 1 3/4 c all purpose flour
- 1/2 c firmly packed brown sugar
- 3/4 c butter or margarine, melted
- 1 c fresh or frozen blueberries (do not thaw)
- 1/3 c raspberry or strawberry preserves
- 1 t all purpose flour
- 1/2 t grated lemon peel (optional)
