Cordon Bleu Appetizers (skinny)

In a small bowl, beat the cream cheese and mustard until smooth
- 4 oz cream cheese, softened
- 1 t dijon mustard
- 1 c shredded swiss cheese
- 3/4 c diced fully cooked ham
- 1/2 c minced chives, divided
- 18 slices French bread (1/2 in thick)
Praline French Toast Casserole

Generously butter a 13x9 baking dish
- 8 eggs
- 1 1/2 c half and half
- 1/3 c maple syrup
- 1/3 c packed light brown sugar
- 10-12 slices soft bread 1 in thick
- Topping
- 1/2 c butter
- 1/2 c packed light brown sugar
- 2/3 c maple syrup
- 2 c chopped pecans
Baked Mac and Cheese

Preheat oven to 350. In a large pot of salted boiling water, cook the pasta to al dente
- Topping:
- 1/2 lb elbow macaroni
- 3 T butter
- 3 T flour
- 1 T powdered mustard
- 3 c milk
- 1/2 c yellow onion, finely diced
- 1 bay leaf
- 1/2 t paprika

- 12 oz sharp cheddar cheese, shredded

Pepperoni Sausage Stuffed Pizza

In a small bowl dissolve yeast in warm water
- 1 pkg active dry yeast
- 1 1/4 c warm water 110-115'
- 2 T olive oil
- 1 1/2 t salt
- 1 t sugar
- 3 1/2-4 c all purpose flour
- Filling
- 10 oz shredded part skim mozzarella cheese, divided
- 10 oz shredded white cheddar cheese, divided
- 2 T all purpose flour
- 2 t dried oregano
- 2 t dried basil
- 1/2 t crushed red pepper flakes
- 1 lb bulk Italian sausage, cooked and crumbled
- 1/2 lb sliced fresh mushrooms
- 3 1/2 oz pkg of sliced pepperoni
- 15 oz can pizza sauce

Low Carb Cauliflower Macaroni and Cheese

- 1/2 t kosher salt or to taste
- 1 large head of cauliflower, cut into small florets
- vegetable oil cooking spray
- 1 c heavy cream
- 2 oz cream cheese cut into small pieces

COMBINE 1 1/2 cups sugar, cornstarch, and salt in a 2 quart saucepan
- 2 cups sugar
- 1/4 cup plus 2 tablespoons cornstarch
- 1/4 teaspoon salt

- 24 oz red potato, diced
- 16 oz pkg frozen corn
- 3 T flour
- 6 c chicken stock
