Shrimp and sausage soup

1. Place all ingredients except shrimp in a 3qt
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 4 red potatoes (8 oz.) quartered
- 8 oz. chorizo sausage, sliced 1/2 in. thick
- 1 large cubanelle or italian frying pepper, quartered and sliced (1 cup)
- 1 stalk celery, thinly sliced (1/2 cup)
- 1/2 cup each white wine and water
- 1/4 cup finely chopped onion
- 1/2 tsp. smoked paprika (optional)
- 1/2 tsp. minced garlic
- 1/4 tsp. each salt and dried thyme
- 1 lb. (31 to 40) medium shrimp, peeled and deveined, thawed if frozen
White Chocolate Pecan Pie

1. Preheat oven to 400 degrees
- 1 9"frozen deep dish pie crust
- 2 cups pecan halves
- 1 1/2 cups white chocolate or vanilla flavored chips
- 3 eggs
- 1/2 cup firmly packed brown sugar
- 1/2 cup light corn syrup
- 3 tblsps. all purpose flour
Slow-Cooked Chili

In a skillet, cook beef over medium heat until no longer pink; drain
- 2 lbs. ground beef
- 2 (16 oz.) cans kidney beans, rinsed and drained
- 2 (14.5 oz.) cans diced tomatoes, undrained
- 1 (8oz.) can tomato sauce
- 2 medium onions, chopped
- 1 green pepper, chopped
- 2 cloves garlic, minced
- 2 tblsps. chili powder
- 2 tsps. salt
- 1 tsp. pepper
- 1 tsp. cumin
- Red pepper flakes
- Shredded Cheddar Cheese
