- 1/2 cup butter or margarine, softened

- 1 cup dired cherries, coarsely chopped

- 1 cup salted dry-roasted pistacio nuts, coarsely chopped

In deep bowl mix all marinade ingredients
- 1/2 cup water
- 1/3 cup light soy sauce
- 1/4 cup vegetable oil
- 3 tblsps. lemon pepper seasoning
- 2 garlic cloves, minced
- 6 pork loin chops, fat removed
Tortellini Salad

- 1 lb. tri-color tortellini
- 3-4 cups California Mix frozen vegetables
- 4 tbsp. Salad Supreme
- 8 oz. Italian dressing (bottle with good seasons dressing packet & balsamic vinegar)
- small can of sliced black olives
Goya Quick Pasta e Fagioli

In a large saucepan, cook bacon until crisp
- 4 slices of bacon (cooked until crisp, then cut into bite size pieces)
- 1 small onion, finely chopped
- 1 medium carrot, thinly sliced
- 2 cups whole peeled tomatoes
- 1 15.5 oz. can Goya Great Northern Beansm undrained
- 1 1/2 tsp. Italian seasoning
- 1 chicken bouillon cube
- 3 cups water
- 1 cup tubular pasta
- Salt and pepper to taste
Beef Stew with Dried Mushrooms

Break dired mushrooms into 1" pieces (this is easier than cutting them after you soak them
- 2 cups beef stock, heated to boiling
- 2 cups dried shitake mushrooms, broken in pieces (or less, as per your taste and budget)
- 1 large onion, chopped
- 2 lb. beef chuck, all fat trimmed, cut into pieces about 1" or slightly larger
- 1-2 tblsp.olive oil (depends on your pan)
- 1/2 cup slow roasted tomatoes, chopped
- (If you don't have roasted tomatoes, use 1/2 cup diced sun dried tomatoes or 1 can diced tomatoes. If using diced tomatoes for crockpot version, drain tomatoes well, measure liquid and reduce the amou
- 2 tblsps.tomato paste (I use a tube. If canned, just freeze the rest.)
- 3 dried bay leaves.

- 1 tblsp. lime zest
- 2 tblsps. fresh lime juice
- 2 tblsps. unpacked light brown sugar, divided
- 2 tblsps. ginger root, fresh, grated, divided
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 1/4 lbs. halibut fillet, four 6 oz. fillets cut 1/2 inch thick each
- 1/2 medium pineapple, cut lenghtwise into 1/2 inch thick spears (about 2 cups)
