Roasted Garlic Pasta Primavera

Saute garlic in olive oil
- Garlic Sauce:
- 1 Tbs. olive oil
- 1 1/2 whole roasted garlic (OR slices roasted 15-20 minutes at 350 degrees)
- 1 c. sliced mushrooms
- 1 c. sliced tomatoes
- 1/2 c. sliced black olives
- 1/2 c. chopped artichoke hearts
- 3 c. cooked pasta
- 2 c. fresh spinach (optional)
- 1/2 c. Parmesan
- Salt and pepper to taste
- 2 chopped shallots
- 3 minced cloves of garlic
- 1 Tbs. olive oil
- 1 c. white wine
- 1 1/2 c. cream
Raspberry Tiramisu

Easy and pretty!
- 12 oz. frozen raspberries, thawed
- 1/4 c. sugar
- 2 oz. (2-inch thick slice) pound cake
- 1/4 c. mascarpone
- 1/4 tsp. vanilla
- 1/2 c. cream, lightly whipped
- 1/2 pint fresh raspberries
Blintz Soufflle

Preheat the oven to 350 degrees
- Filling:
- 8 oz. cream cheese, softened
- 2 c. ricotta cheese
- 2 egg yolks
- 1 1/2 Tbs. sugar
- 1 tsp. vanilla
- Batter:
- 1/2 c. softened butter
- 1/3 c. sugar
- 6 eggs
- 2 tsp. baking powder
- 1 1/2 c. sour cream
- 1/2 c. orange juice
- Fruit Sauce:
- 1 8-oz. jar current jelly or seedless raspberry jam
- 1 c. fresh strawberries
- 1 c. fresh blueberries

In small bowl, combine flour, sesame seeds, thyme, tarragon, poppy seeds, and 2 tsp
- Melted Herb Butter:
- 1/2 c. flour
- 1 1/2 Tbs. sesame seeds
- 1/2 Tbs. ground thyme
- 3/4 Tbs. ground tarragon
- 1/2 Tbs. poppy seeds
- 1 tsp. salt
- 8 chicken thighs
- 2 egg whites, lightly beaten
- 4 Tbs. butter
- 1 round loaf artisan bread
- 4 Tbs. butter
- 3 bs. sesame seeds
- 1 1/2 tsp. dried tarragon
- 1 Tbs. ground thyme
- 1 Tbs. poppy seeds
Fish Tacos

Mix sauce ingredients together and fold into cabbage
- Sauce:
- 1/2 c. sour cream or yogurt
- 1/2 c. mayonnaise
- 1 lime, juiced
- 1 jalapeno, minced
- 1/2 t. oregano
- 1/2 t. cumin
- 1/2 t. dill weed
- 1 t. cayenne
- 1/2 head cabbage
- Corn tortillas
- Fish
Corned Beef and Cabbage

Rinse the corned beef and put in large Dutch oven
- 5 lbs. corned beef
- 5 garlic cloves, lightly smashed
- 10 peppercorns
- 4 springs fresh thyme
- 2 bay leaves
- 12 ounces Guinness
- 1 c. beef broth or stock
- Water
- 4 yellow onions, cut in wedges, plus 1 sweet or yello2 onion, sliced
- 2 parsnips, cut in chuncks
- 3 carrots, cut in chuncks
- 6 medium red potatoes
- 1 medium head green cabbage, quartered and cored
- 4 Tbs. butter
Mexi-corn Cheese Dip

Mix all ingredients together and refrigerate until ready to serve
- 2 (11 oz.) cans Mexican-style corn, drained
- 1 c. sour cream
- 1/2 c. mayo
- 1 c. chopped green onion
- 1 4-oz. can diced green chilies, drained
- 1 tsp. seasoned salt
- 1 tsp. chili powder
- 1 Tbs. minced garlic
- 1 fresh jalapeno, chopped
- 1 8-oz. package Mexican shredded cheese blend
Apricot Scones with Devonshire Cream

Combine dry ingredients in a bowl
- Devonshire Cream:
- 2 c. flour
- 1/4 c. sugar
- 1 Tbs. baking powder
- 1/4 tsp. salt
- 1/3 c. cold butter
- 1/2 c. chopped dried apricots
- 1/2 c. chopped pecans (optional)
- 1 tsp. grated orange peel
- 1 c. plus 2 Tbs. whipping cream, divided
- 3 oz. cream cheese, softened
- 1 1/2 Tbs. powdered sugar
- 1/2 tsp. vanilla
- Enough cream for a spreadable consistency (about 1/4 c.)
Dry Jerk Seasoning for Grilled Vegetables

Adds a little zing to those summer grilled vegetables
- 1 tsp. allspice
- 1 tsp. chile powder
- 1/2 tsp. nutmeg
- 1/4 tsp. cinnamon
- Pinch of garlic powder
- 1 Tbs. salt
- 1 Tbs. onion powder
- 1 tsp. pepper
Long Island Iced Tea

- 1 oz. vodka
- 1 oz. gold tequila
- 1 oz. rum
- 1 oz. gin
- 1 oz. Cointreau or triple sec
- 5 oz. sweet and sour mix
- 2 oz. Coke
