In a large Dutch oven or heavy pot, heat oil over high
- 1 tablespoon vegetable oil
- 2 pounds boneless beef chuck, cut into 1/2-inch cubes
- Coarse salt and ground pepper
- 1 medium onion, sliced lengthwise
- 2 tablespoons all-purpose flour
- 3 cans (14.5 ounces each) reduced-sodium chicken broth
- 1/2 pound carrots, cut into 1-inch chunks
- 2 medium russet potatoes, peeled and cut into 1-inch dice
- 2 cups egg noodles
- 3 tablespoons finely chopped fresh parsley
- 1 teaspoon red-wine vinegar

The ultimate Spicy Peanut Butter Bacon Sliders for any occasion
- 2 pounds ground beef
- 1/4 cup soy sauce
- 2 tablespooons sriracha
- 1/2 cup creamy peanut butter, divided
- 1 pinch pepper
- 6 tablespoons butter, softened
- 12 whole slider buns
- 12 slices pepper jack or cheddar cheese
- 12 slices cooked bacon

Golden Beet and Pomegranate Salad

- 3 golden beets

- 1/4 cup red wine vinegar
- 1/4 cup chicken broth (or vegetable broth for vegetarian option)

Carne Asada

1 Lay the flank steak in a large non-reactive bowl or baking dish
- 2 pounds flank or skirt steak
- Olive oil
- Kosher salt and freshly ground black pepper
- 4 garlic cloves, minced
- 1 jalapeño chile pepper, seeded and minced
- 1 teaspoon freshly ground cumin seed (best to lightly toast the seeds first, then grind them)
- 1 large handful fresh cilantro, leaves and stems, finely chopped (great flavor in the stems)
- Kosher salt and freshly ground black pepper
- 2 limes, juiced
- 2 tablespoons white vinegar
- 1/2 teaspoon sugar
- 1/2 cup olive oil
Huevos Rancheros

Start by setting down one layer of tortilla chips down on the plate
- 2 handfuls tortilla chips
- 1 ripe avocado
- 2 tsp minced red onion
- 1.5 tsp lime juice
- 1 tsp minced jalapeno
- salt and pepper
- 1/2 cup chopped tomato (season with salt and pepper)
- 1 cup pinto or black beans (I use canned beans)
- 2 eggs
- 2 tbsp Mexican crumbling cheese, like queso fresco or cotija, or pepper jack
- 1 tbsp olive oil
- chopped parsley or cilantro, for garnish (optional)
