White Bean Spinach & Basil Hummus

In a food processor add beans, garlic, green onions, spinach, basil and pine nuts
- 1 can 14 oz can, white beans, drained and rinsed
- 2 cloves garlic
- 1/4 c green onions, chopped
- 1/2 c baby spinach
- 1/4 c fresh basil
- 1/4 c pine nuts
- 2 T olive oil
- 1 t lemon juice
- 1 t pepper
- 1/2 t Sea Salt
Avocado, Bacon & Tomato Summer Salad W/Dill Dressing

Cook pasta according to package directions; drain
- 1 box Rotini
- 3/4 c mayonnaise (light or regular)
- 2 T fresh lemon juice
- 1 T chopped fresh dill or 1 t dried dill
- 1/2 t salt
- 1/2 t garlic powder
- 1/4 t pepper
- 2 cups cherry or grape tomatoes, halved
- 1 to 2 avocados, chopped
- 6 slices bacon, cooked crisp and crumbled
Calzones or Pizza Pockets

1 cup pizza sauce, heated Press 3 rolls together and, using a little flour, roll them into a 12-inch circle
- 12 Rhodes Texas™ Rolls, thawed but still cold
- flour
- 2 ounces sliced pepperoni
- 8 ounces sausage, browned and drained well
- 2 1/2-ounce can sliced olives, drained well
- 1/2 cup sliced fresh mushrooms
- 1/2 cup chopped green peppers
- 1 cup grated mozzarella cheese
- 1 teaspoon Italian seasoning
- 1 cup pizza sauce, heated
French Toast Bread Pudding

Cut rolls into 1-inch cubes and place in a sprayed 9x13-inch baking pan
- 12 Rhodes Warm-N-Serv™ Dinner Rolls or 12 Rhodes™ Dinner Rolls, baked according to package directions
- 8 ounces cream cheese
- 8 eggs
- 1 1/2 cups milk
- 2/3 cup half and half
- 1 1/2 cups maple syrup, divided
- 1/2 teaspoon almond flavoring
- powdered sugar

Pickled Sweet Peppers

Cut red and banana peppers into strips, discarding seeds
- 5 large sweet red peppers
- 8 banana peppers (about 1 pound)
- 1 medium onion, thinly sliced
- 8 garlic cloves, peeled
- 4 teaspoons canola oil
- 2-1/2 cups water
- 2-1/2 cups white vinegar
- 1-1/4 cups sugar
- 2 teaspoons canning salt
Chocolate and Fresh Raspberry Cream Napoleons

Cook the 12 ounces of raspberries in a medium saucepan over medium heat, stirring frequently until the raspberries ...
- 2 6-oz. packages (about 3-1/2 cups) fresh raspberries, plus 8 to 10 individual raspberries for topping the finished napoleons
- 1 c. heavy whipping cream
- 8 oz. cream cheese, at room temperature
- 1 c. prepared or homemade marshmallow cream
- 1 5-oz. box Moravian Cookies "Artisan Blend Chocolate" (I also found a small chocolate wafer cookie from Nabisco that I think would work well.)

In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes
- 1 (8 ounce) package angel hair pasta
- 2 teaspoons olive oil
- 1/2 cup finely chopped onion
- 1 clove garlic, chopped
- 2 1/2 cups chopped tomatoes
- 2 cups boneless chicken breast halves, cooked and cubed
- 1/4 cup chopped fresh basil
- 1/2 teaspoon salt
- 1/8 teaspoon hot pepper sauce
- 1/4 cup Parmesan cheese
Pudding Filled Dirt Cupcakes

Preheat oven to 350* Prepare cake mix according to box
- 1 chocolate cake mix
- 1 c chocolate cookie crumbs
- 1 can chocolate frosting
- 24 gummy worms, each one cut into 2 pieces
- 1 chocolate pudding mix (4 serving box)
- 1 1/2 c milk
- 1 c Cool Whip
LADY FINGER COOKIES

- 1 c. brown sugar
- 3/4 c. white sugar
- 1/2 c. butter
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. soda
- 3 c. flour
- 1 tsp. cream of tartar
Crab Filled Sweet Potato Cannelloni

Peel and thinly slice the sweet potato using a mandolin
- 1 large sweet potato
- 8 oz lump crab meat
- 1/4 cup brunoised apple (julienned apple cut into small diced squares)
- 1 scallion, chopped
- 2 tbsp chopped chives
- 1/8 tsp red pepper flakes
- 1 tsp stone ground mustard
- 1 tbsp mayonnaise
- salt and pepper
