Chicken Lasagna Recipe

Cook noodles according to package directions
- 10 uncooked lasagna noodles
- 1 Ib boneless skinless chicken breasts
- 1 can (14-1/2 oz) diced tomatoes, undrained
- 1 can (12 oz) tomato paste
- 1 1/2 cups sliced fresh mushrooms
- 1/4 c chopped onion
- 1 T dried basil
- 1 3/4 teaspoons salt, divided
- 1/8 t garlic powder
- 3 cups (24 ounces) 2% cottage cheese
- 1/2 c egg substitute
- 1/2 c grated Parmesan cheese
- 1/3 c minced fresh parsley
- 1/2 t pepper
- 2 cups (8 oz) shredded part-skim mozzarella cheese
Valentine Chex® Mix

In large bowl, place cereal
- 9 cups Rice Chex® or Corn Chex® cereal
- 1 cup white vanilla baking chips
- 1/2 cup peanut butter
- 1/4 cup butter or margarine
- 3/4 cup powdered sugar
- 1/2 cup red, white and pink candy-coated chocolate candies
- 1/4 cup red or pink jimmies sprinkles
Simple Scones

Adjust oven rack to lower-middle position and preheat oven to 400 degrees
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter, frozen
- 1/2 cup raisins (or dried currants)
- 1/2 cup sour cream
- 1 large egg
BLTurkey Sandwich with Balsamic Mayo

In a small bowl, combine the mayonnaise, vinegar, salt, and pepper
- 1/2 cup mayonnaise
- 1 Tbsp balsamic vinegar
- 1/8 tsp salt
- pepper to taste
- 8 slices toasted bread
- 4 iceberg lettuce leaves
- 8 strips cooked bacon, halved
- 3 roma tomatoes, sliced (or use turkey in place of the tomatoes)
Multi Grain Bread

Place rolls in a bowl and allow to rise until double in size
- A healthy bread full of nuts, seeds and grains. Tastes fabulous toasted.

- 2 tablespoons wheat germ
- 2 tablespoons steel-cut oats
- 1/2 cup chopped walnuts

- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, smashed and peeled

- 2 cups packed basil leaves (from 1 bunch), torn if large
- 3/4 pound fresh mozzarella, cut into 1/2-inch pieces (2 1/2 cups)
